When the next blueberry season comes around, plan to get out in the fields and hand pick these little gems. Berry picking is a great way to have fun with your family while enjoying Mother Earth's bounty. A good stock of berries in the freezer will last throughout the winter. I still have a few bags from last year's picking of Organic Blueberries in my freezer! Blueberry Blast GS Yield: 1 quart 2 cups water 1 handful spinach 1 cup fresh pineapple 1 cup frozen blueberries 1 orange, peeled and seeded 1 Tbsp Hemp seeds Add all ingredients to a blender and blend together until smooth Nutri-Tip: Blueberries have sky-high levels of antioxidants, which combat the damage done by inflammation. Anthocyanins, the natural plant compounds that give blueberries their deep colour, may have antidiabetic effects as well. And new research suggests blueberries may protect the heart muscle from damage. Pineapple contains the powerful enzyme bromelain which can ease inflammation, relieve pain and stimulate digestion. ___________________________________________________ Herbal teas can be an ideal way to get the healing power of herbs into your everyday diet. If you enjoy drinking your daily cup of fresh herbal tea like I do, then adding nettle tea to a Green Smoothie may be the next logical step! Stinging Nettle Tea GS Yield: 1 quart 2 cups cold Nettle Tea 1 cup Spinach 1 mango, peeled and seeded 1 cup fresh pineapple, chopped 1" chunk of fresh ginger 1 Tbsp Hemp seeds Optional: Unpasteurized honey Make 2cups of Nettle Tea: Fresh nettles (1 cup nettles in pot with 1 cup boiling water); Dried nettles (1 tsp dried nettles to 1 cup boiling water is a moderate dose) Let the nettle tea steep a minimum of 10 minutes, then cool overnight Blend all ingredients together until smooth For a sweeter taste, simply add more pineapple or optional honey to taste Nutri-Tip: Stinging Nettle has a well-earned reputation because of its high alkaline-mineral content (silicon and iron) and blood-building properties. Silicon is present in blood vessels, bones, cartilage, connective tissue, hair, ligaments, lungs, lymph nodes, muscles, nails, skin, teeth, tendons - nettles contain one of the highest levels of silicon found in any food. By neutralizing and flushing out acidic waste, nettles can help with weight management, and being high in iodine they can benefit the thyroid gland. Fresh nettles can be added to a blender drink, or boiled in a pot of water and poured through a strainer for tea. Putting fresh nettles through a juicer is another way of accessing the high-quality minerals and oils without being stung. Nettle leaves are usually collected, eaten and/or dried in May and June, just before coming into flower.
Fermented Garlic Dill Pickles .75 Litre - 6” Fido glass jar 3 cloves garlic, peeled & sliced 1/2 tsp whole dill seed, or leafy fronds 1/4 tsp red pepper flakes 1/8 tsp peppercorns 4 Oak leaves (best for crunchy pickles) or try grape, raspberry, blackberry leaves, or even black tea leaves 2 cups mini cucumbers, sliced (6 mini cucumbers give just over 2 cups) Brine: 1 Tbsp Himalayan Sea Salt (15g=5% brine), 1-1/2 cups Filtered water · Place spices and leaves in bottom of jar · Slice cucumbers using #2 on mandolin slicer - add sliced cucumbers to jar · Mix water and salt, stir and add to jar · Fit mesh screen over top of veggies and push down while folding edges down inside of jar to cover all veggies · Add glass weight to hold veggies down below the brine · Seal jar and leave on counter for 4 days · Taste after a few days and if OK place jar in the refrigerator for up to 3 months max
When friends drop by for an unexpected visit, it helps to have some good raw recipes on hand that can be quickly made into appetizers. Today I got busy, and the end result is a hearty raw dip perfect with raw crackers or veggie sticks, and great for lunch when used as a spread inside wraps, or on raw bread topped with tomatoes and sprouts! With this dip my first choice would have been cilantro, but since I had none in the fridge I decided to pick some Arugula fresh from my garden for its slightly peppery taste. I am very pleased with how this turned out . . . a welcome addition to my recipe files! Raw Curried Carrot Dip Yield: 2 cups 1 cup Sunflower seeds, soaked 2 cups carrots, chopped 1/4 cup fresh lemon juice 1 clove garlic, pressed or finely chopped 1 Tsp Tamari, organic gluten-free 1 Tbsp raw Sesame Tahini 1/4 tsp Himalayan salt 1/2 tsp ginger, ground 1/2 tsp Madras curry powder 1/2 tsp cumin, ground 1/8 tsp red pepper flakes (red pepper flakes can be hot - start with less and add more as needed) 1/4 cup chopped Arugula (or cilantro or dill) I soak my Sunflower seeds for 6 hours or overnight, drain and rinse them really well, and then dehydrate them overnight. Stored in covered glass jars in the fridge, they are now ready for eating or adding to recipes. If you don't have a dehydrator, use Sunflower seeds that have been soaked for this recipe. Peel carrots, remove ends, and chop into small pieces In a food processor add the Sunflower seeds and chopped carrots and process Then add remaining ingredients (except for chopped Arugula) and process again If you run the food processor a bit longer you will have a creamier dip without pieces of Sunflower seeds When the texture is to your liking, transfer the dip to a bowl Finely chop the Arugula (or cilantro or dill) Add the chopped Arugula to the bowl with the dip, stir to mix and enjoy!
Kimchee Slaw One of my favourite Chefs is Jamie Oliver who creates great home-cooked meals from scratch - adding his own unique twist to each element. And although he is not a Raw Chef, his food is so hearty and appetizing that I would give it a try - that is if I ever decided to cook again! Kimchi is a spicy Korean dish that is prepared by fermenting Chinese cabbage and vegetables with ginger, hot chili peppers, and other ingredients. Kimchi is similar to, but generally ferments faster than, sauerkraut. This one-meal version is one of Jamie's recipes - a perfect fit for the raw foodist in you! Raw Kimchee Slaw Yield: 4 cups Small bunch of radishes 1 Fresh green chili 1 small red onion Piece of fresh ginger (thumb size) 1/2 a Chinese cabbage 2 Fresh Limes Small bunch of fresh cilantro (coriander) Himalayan salt 1 Fresh red chili Sesame oil Wash the radishes and their greens well Peel and cut the red onion in half so it is easier to add to food processor Add the shredding disc to a food processor Shred the radishes with their greens, red onion, and Chinese cabbage by pushing through the feed tube on food processor Empty contents of food processor into a glass serving bowl Remove the shredding disc and replace it with the S-blade in food processor Add the bunch of cilantro and the chillies (stalks removed and seeded for less heat if desired) to the food processor and process Peel and crush or grate the ginger, then add into the bowl Into the bowl, squeeze the juice from both limes, add a pinch of Himalayan salt, and a splash of sesame oil Really scrunch or massage ingredients together with your hands to mix well and release juices Best served right away, but first taste to check the balance of flavours Kimchee Slaw is wonderful either as a main meal or as a side dish. Try it with raw vegan Nori rolls!

This cheesecake comes to us courtesy of Power House Living Foods in Nanaimo. Thank you to Toni Jeffries the owner, who generously gave her permission to share the recipe here for you to enjoy. I enjoyed a slice on my last visit and can only think of one word to describe it . . . DIVINE! Power House Pumpkin Cheesecake Crust: 2 cups pecans 1/2 cup Medjool dates 1/2 tsp Himalayan salt Blend pecans and salt in a food processor until slightly ground Add dates and process until combined Press into a 10" spring form pan and set aside Filling: 2 cups cashews, soaked 2 cups almond mylk 2 cups fresh pumpkin, cubed 1 cup Agave 1/4 cup lemon juice, fresh 1/4 tsp Himalayan salt 1 tsp Cinnamon 1/2 tsp Nutmeg Combine filling ingredients in a blender until well combined Then slowly add the following ingredients: 1 cup Coconut oil 2 Tbsp Lecithin (I would use Sunflower lecithin instead of Soy lecithin-EZ Raw Living) Blend again until well combined and pour onto the top of the crust; freeze To serve take from freezer and place in the fridge for 4 hours to thaw Decorate and serve The next time you are in Nanaimo, it is definitely worth a visit one of their two locations: North location at 6560 Metral Drive, 250-933-3733; South location at 200 Commercial Street, 250-591-7873; menu online at www.powerhouseliving.ca or look them up on Facebook.

I'm enjoying my visit to Texas, but have been missing some of my basic raw foods! Recipes that are so quick and simple to make at home can become a challenge without a food processor. (A Vitamix blender, Cuisinart food processor, and an Excalibur dehydrator are my kitchen helpers at home.) Just thinking about this mousse made my mouth water. And using what local ingredients I could find was well worth the effort . . . for this sweet taste of home. Kitchen Tips: I substituted raisins for the dates, liquid vanilla for vanilla powder, and natural unsweetened cocoa powder for raw carob powder. Using a food processor = a thick, creamy, silky smooth mousse; Using a Nutri Bullet = chunks and bits of raisins, semi-smooth mousse, and much more work; But the taste was close and the mousse was sooo satisfying topped with organic strawberries. Creamy Chocolate Mousse Yield: 2 servings 1/4 cup pitted Medjool dates, soaked 1/4 cup Date Paste or agave 1/4 tsp vanilla powder 3/4 cup mashed avocados (1-1/2 avos) 1/4 cup raw carob powder 1/3 cup water Place the dates, date paste or agave and vanilla in a food processor with the S-blade and process until smooth (because Medjool dates are soft they are easy to process) Add avocado and carob powder and process again Stop occasionally to scrape down the sides of the food processor bowl with a spatula Add the water and process briefly Stored in a sealed container, mousse will keep in fridge for 3 days or 2 weeks in the freezer

Recently, Clive of RawBC, invited me to contribute a couple of Cilantro recipes to the RawBC June Newsletter, and this is one of the recipes I shared with them. Tip: When making pesto always make an extra batch to spoon into ice cube trays and freeze. When frozen simply pop the little pesto cubes into baggies and store them in the freezer. Instant Pesto Pasta?? Thaw 2 pesto cubes per serving, make noodles from a raw zucchini, mix pesto and noodles together -Voilà dinner is served! Raw Cilantro Pesto Yield: 6 ice cube sections (1/2 tray) 1/4 cup raw walnuts 2 cups Cilantro leaves (about 1 large bunch with stems removed) 1 cup Basil leaves 2 Tbsp homemade raw parmesan (recipe on next 2 lines): - In food processor mix 1/3 cup walnuts, 1/3 cup nutritional yeast, and pinch of Himalayan salt - store in a jar in fridge for 2 weeks 2 Tbsp extra-virgin olive oil 2 Tbsp lemon juice 2 cloves garlic, pressed 1/4 tsp Himalayan salt Place all ingredients in a food processor and blend until smooth
