Enligt Wikipedia går skalan från 0 till 16 000 000. Hettan på Harissa beror på hur starka chilifrukterna är, således kan man öka eller sänka hettan själv. Willys och ICA hade inte torkad chili, men på Foodmix lyckades jag hitta torkad chili. 🥳 Det står inte vilken sort det är, men de är från Spanien 🤷♀️ Jag utgick från Mosaic North Africas recept. Första gången tog jag 12 chilifrukter men det gick inte att mixa för det var för liten volym. Tog det lång tid? Ja. Blev det gott? Ja. Blev det en fin bild? Absolut inte. Skulle jag göra om det igen? Högst troligen inte Harissa Mängd: ca 90 g Ingredienser: 50 torkade röda chilifrukter (~ 30 g) 10 dl hett vatten 15 vitlöksklyftor 4 msk olivolja 1 1/2 msk malen koriander 1 1/2 msk malen brödkummin 2 1/2 tsk malen spiskummin 2 1/2 tsk salt Instruktioner: Häll chilifrukt och vatten i en skål. Låt stå i 30 minuter. Häll ut vattnet. Ta bort stammar. Kärna ur. Grovhacka. Skala och grovhacka vitlök. Häll chilifrukt, vitlök, olivolja, koriander, brödkummin, spiskummin och salt i en mixer. Mixa så slätt som det går. Förvaring: Förvara i lufttätt med lite olivolja på. Maʿa s-salamah!

Source: Cal Peternell's Twelve Recipes The original recipe calls for chopped or grated tomatoes or 1/2 cup of roasted tomato puree. I find the canned, crushed tomatoes to work just as well. If you don't feel like using dried chickpeas and cooking them from scratch, you can use canned chickpeas, drained and rinsed. You'll need 6 cups (about three 15-oz cans). Peternell suggests a few other serving ideas: croutons, a poached egg or hard-boiled egg, a sprinkling of ground cumin, oil and capers. I keep it simple and swirl in some harissa, which is now readily available at most markets. You also can make your own: See Simple Homemade Harissa. Peternell offers two simple recipes as well: Make a paste with 2 tablespoons paprika and 3 tablespoons hot water. Add 2 teaspoons crushed garlic, 3 tablespoons olive oil, a splash of vinegar, and, if you wish, ground cumin and cayenne. Mix together 3 tablespoons sambal oelek, 1 to 2 cloves crushed garlic, and 6 tablespoons olive oil.
