This recipe for Easy Cornflake Tart is a blast from the past, as I used to love this when I was at school as part of school dinners "afters". My recipe is so easy as it uses ready-made shortcrust pastry, although you can use homemade pastry too. It uses simple store cupboard ingredients such as cornflakes, golden syrup, jam and sugar. Serve the tart with custard for that very nostalgic taste of school dinners, either warm or cold.

However, you can of course make this recipe with homemade shortcrust pastry and mincemeat. I used a block of shortcrust pastry for these Mincemeat & Almond Squares that was in the freezer - in an attempt to empty the freezer before moving house. I also used a stray jar of mincemeat that I found at the back of the cupboard, with half a bag of flaked almonds, and the Christmas Cake brandy. This big mince pie is vegetarian, but can easily be made vegan, as I'll show further below.

In an attempt to make the jam go further, the school cooks would add a little water and custard powder to the seedless jam and then heat it up together.
