Bounty Stuffed Dates Let's be real, dates are pretty amazing. Nature's candy, packed with sweetness and nutrients our body loves. If you take a scroll through our instagram, dates frequent more regularly in our diets than we care to admit (we’re obsessed). So with this obsession, comes expert culinary training and we have found the PERFECT combination… CACAO + DATES + COCONUT! These stuffed dates are the perfect bite. We're talking gooey coconut filling drowned in a pure cacao shell. Plus, they're loaded with antioxidants and fibre, which limits the post sugar blood sugar spike. Why We Love Pure Cacao Instead of using chocolate, that’s most likely filled with sugar, we're using 100% pure cacao. This is basically chocolate in its purest form before you add all the c*** to make it taste super sweet. Pure cacao is packed with antioxidants that fight free radicals and vitamins such as iron and magnesium. Plus, cacao is a good source of fibre, which means you'll feel fuller for longer. Ingredients You Probably Already Have: 100g nibbed cacao (grated or chop the block) 8 Medjool dates (or Deglet Noor for a chewier bite) 1 tbsp Maple syrup / Coconut Sugar / Honey 2 tbsp Creamy part of a can of coconut milk 4 tbsp desiccated coconut (toasted) Sea salt (optional, for a sweet and salty thing) Method: 1. Toast the coconut on a dry pan, watching it closely as it burns easily. Let it get slightly browned.2. Mix in the desiccated coconut into a bowl with the coconut cream. 3. Pit 8 dates and spoon in the coconut mixture into the middle. Around a tsp per date.4. Pop those in the freezer for 15 mins to harden.5. While they are in freezer, melt the cacao + mix in maple syrup (see tips below).6. Take the coconut dates out of freezer and pop the cold dates into melted cacao and cover (The cacao should harden straight away.)7. Place them on a plate and back into the freezer to harden some more.8. Serve fresh from freezer so they’re nice little ice-cold snacks! ENJOY :)
