Cari lettori, il Pane Barbari e' un pane tradizionale e molto comune in Iran. Quando e' caldo ha un profumo meraviglioso ed è talmente buono che qualche volta non hai voglia di mangiare altro e vai avanti con questo pane fino a non avere piu' fame. Il Pane Barbari (Nane Barbari) viene mangiato soprattutto durante la piccola colazione assieme ad un formaggio molto simile al "feta greca", oppure prima dei pasti assieme ad erbe aromatiche e noci, e durante l'estate come pasto principale assieme a formaggio e anguria o formaggio e cetrioli. E' un pane piatto, croccante fuori e morbido dentro. Nei panifici tradizionali in Iran viene preparato nei forni a pietra o mattoni, percio' si crea un strato croccante sul fondo del pane. Ingredienti per 4 persone ------------------------------------------- Farina di frumento 500 gr Lievito fresco di Birra 30 gr Acqua 300 cc Sale 20 gr Zucchero un cucchiaino Olio d'oliva due cucchiai Semi di sesamo Semi di sesamo nero oppure semi di Papavero Per spennellare ------------------------- Farina Un cucchiaio Bicarbonato Un cucchiaio Un bicchiere d'acqua Due cucchiai di farina di mais solo per la superfice Sciogliere il lievito con lo zucchero in un bicchiere d'acqua tiepida e lasciare per 20 minuti finche' non si forma una bella schiuma sulla superfice. Prendere poi una ciotola capiente e mettere 200 grammi di farina e tutto il liquido del lievito e mescolare bene, finchè si arriva ad una bella crema; coprire e lasciare lievitare per un'ora. Poi unire altra farina e sale e olio ed il resto dell'acqua, lavorare bene l'impasto, coprire l'impasto con un panno e lasciare a lievitare per mezz'ora. Dopo, se volete avere dei panini piccoli, dividete l'impasto in 5/6 panini oppue, se volete la misura originale, fate tre palline da questo impasto e lasciate a lievitare ancora per 40 minuti finchè l'impasto sia ben lievitato. A parte sciogliete un cucchiaio di farina e bicarbonato, riscaldandoli in un bicchiere d'acqua, e lasciate raffreddare, per poi spennellare il pane prima di infornare, cosi il pane avrà la superfice bella dorata. Tirate l'impasto a forma ovale e cercate di inciderlo , come da foto, per tutta la lunghezza, a distanza di due centimetri. Spennellare con il liquido preparato prima e poi spargete sopra la farina di mais, i semi di sesamo e sesamo nero oppure papavero. Mettere in forno a 260 gradi C per 8/10 minuti ed ecco a voi un bel pane Barbari croccante e profumatissimo A tutti voi Buona Colazione con questa meraviglia ! Shoreh
