The dish that you see here is one that I first made in 1979 when I was married to husband number one. It’s an easy and tasty chicken dish, perfect for working couples, and not dissimilar to the recipe for Company Chicken that is also on this site. We made it three times during that year, and that’s the last time I had it until yesterday. The reason is that my husband had been given a bottle of Irish Mist as a Christmas present. We knew nothing about Irish Mist, so I used it up by making the various recipes that were found in the tiny little booklet affixed to the neck of the bottle. Most of the recipes were forgettable (I remember a particularly insipid cake), but we did like this chicken. I’m not so sure if I liked the taste the best, or if I liked how easy it was to make, but I digress. When the bottle had been used up, we decided to get another one to keep on hand so we could make the chicken again. It was at this point that we priced bottles of Irish Mist and decided that it was too rich for our then meager budget and I never had it again. During a recent sleepless night, I started thinking about that chicken. I’m sure that most of you don’t think about food when you can’t sleep, but I do. I began to wonder about that recipe, and was pleased to find it via a Google search. At the time that I first made it, it was called “Irish Mist-ery” Chicken, but I found it as Irish Mist Chicken on Cooks.com. Then I wondered if Irish Mist even existed anymore, and come to find out, it does indeed; I managed to pick up the last bottle at the local market. I adapted the recipe slightly based upon what I had on hand, and enjoyed not only the tasty chicken, but those fond memories of youthful experimentation in the kitchen. If you’re looking for something Irish for St. Patrick’s Day, but don’t care for corned beef, why not give Irish Mist Chicken a try? Irish Mist Chicken 4 slices Black Forest deli ham 2 whole boneless chicken breasts, cut in half 10 oz. can cream of mushroom soup 2/3 c. sour cream ½ c. Irish Mist Honey Liqueur 4 oz. cremini mushrooms, sliced Preheat oven to 350ºF. Arrange slices of ham in the bottom of an 8 x 8 inch baking dish (I recommend this one because it’s green and so perfect for St. Patrick's Day). On each slice of ham, place a chicken breast half. There’s not a form of mashed potato that doesn’t speak deeply to me, but this Colcannon with Brown Butter is just on another level. The colcannon itself doesn’t really veer from the traditional Irish dish of mash and kale or cabbage, but instead of having a melted pool of golden butter on top, along with the also traditional scallions (that’s to say, spring onions) I brown the butter first, so that it is deep, caramelly and nutty. But then, brown butter is one of life’s great joys. It’s easy enough to make: all you need to do is heat butter in a (preferably light-coloured, such as stainless steel) pan until it turns the colour of a hazelnut, which for the amount here should take around seven minutes. And yes, there is a lot of butter, and feel free to reduce it if it appals you, but do remember that colcannon is not just a dish that celebrates potatoes but also exults in, not apologises for, the butter. I wish I could use good Irish potatoes, such as Kerr's Pinks or Golden Wonder for this, but I can’t get hold of them where I live. So I use Roosters instead, and wonderful they are, too — and for those of you Stateside, I would recommend Russets. Ideally — and this is not always easy, I know — you need potatoes of around the same size and you boil them unpeeled and whole; this stops them from getting waterlogged. I don’t ever bother to peel the potatoes before mashing them; you’re folding cooked kale in so it’s not going to be a smooth mash anyway. Finally, you brown the butter, mix the spring onions with it, beat some into the mash, and pour the rest over, letting the butter leave scallion-flecked, brown-speckled pools of deep delight on top. This is divine enough with just some rashers of bacon on the side, though frankly I can eat it in a bowl just by itself. But I have to commend to you now alongside your Christmas ham, or to bring bolstering warmth to a plate of cold cuts in those post-Christmas days. For US cup measures, use the toggle at the top of the ingredients list.

Cooking Irish can also be found at PETITCHEF and Pinterest. I first had prawn balls with dipping sauces at a bed and breakfast in Bantry Bay. The hostess was a wonderful lady who really enjoyed wowing her guests. It was very apparent she was not in the inn business just for an income. She loved sharing her beautiful home, her fabulous cuisine, and her joyous stories with all her sociable guests. Those who wanted privacy were provided that as well, but she always had something yummy in her parlor for guests to savor while sharing Irish yarns. Bantry Bay is located in County Cork, southwest Ireland. It runs approximately 22 beautiful miles from northeast to southwest into the Atlantic Ocean. There are many villages and towns dotting the bay, and the area is just a wonderful part of Ireland. As in most of Ireland, the seafood is fresh and served with Irish pride. Even in the small villages of the non-coastal counties, seafood is readily available. When I was living in Trim, County Meath, the fish truck came and set up on the main village street at least 2 or 3 times a week with fresh seafood and fish from the Irish Sea. This particular recipe was served at an inn on Bantry Bay. Serve with any dipping sauce of your choice. I have included the one served on a memorable night in a wonderful Glengariff bed and breakfast: goat cheese with raspberry chutney. [Prawns are not really shrimp, but here in the US we usually make that substitution when trying to duplicate a European recipe.] 1985: Me in front of Brown Thomas on Grafton Street in Dublin admiring this wedding gown. I imagined it for a winter wedding in white velvet. In my hand is a copy of Poland by James Michener I had just purchased. Irish Prawn Balls with Goat Cheese and Chutney Dipping Sauce Ingredients: 1 lb. of cooked prawns or shrimp 1 garlic clove, minced Liberal pinch of salt 1/2 cup of butter 1 small white onion, finely chopped 1/2 medium green pepper, finely chopped 1/2 cup of celery, finely chopped 3/4 cup of saltine crackers, crushed 1/2 cup of mayonnaise 1 T. of prepared mustard 2 tsps. of Worcestershire sauce 1/8 tsp. of cayenne pepper 1 cup of flour 2 eggs 2/3 cup of water 2 T. cornstarch 1/2 tsp. pepper Peanut oil or frying oil of your choice Directions: Sift the flour into a mixing bowl. Make a well in the center and add the egg. Mix the egg into the flour with a wooden spoon. Add half the water, mix thoroughly, and stir in the remaining water. In a separate bowl, mix the pepper and cornstarch. [This method may seem a bit rigid and old-fashioned, but this is how she told me to do it. So I do it this way. You may want to make your own batter for coating.] Sauté the onion, green pepper, and celery in the butter until tender, stirring frequently. To prepare the shrimp, put into a food processor with garlic and salt. In a large bowl add the shrimp, 1 egg lightly beaten, the crushed crackers, mayonnaise, mustard, Worcestershire sauce, and cayenne pepper. Combine gently. Stir in the vegetables. Form into balls about the size of a small ping pong ball. For a more rustic look, use an ice cream scoop. Place each ball into the cornstarch mixture, and then dip into the batter. Do not overcoat. Fry each in the hot oil for just a few minutes until golden brown. Do not overcook. Goat Cheese and Chutney Dipping Sauce: Ingredients: 1 cup of crumbled goat cheese 1 cup of raspberry chutney 1/2 cup of mayonnaise 1/4 cup of cream Pinch of garlic powder Directions: Put all ingredients into a food processor and combine. Add as little or as much cream to form the consistency you like for a dipping sauce. It also depends on the type of goat cheese you select. The softer the cheese, the less cream needed. This would be delicious with any type of chutney you like, and for an even sweeter dipping sauce, one could substitute preserves for the chutney. I also like the common horseradish sauce used in dipping. It is a nice combination with the shrimp. I hope this recipe brings a touch of southwest Ireland to you and yours. Enjoy.
