Adapted from Deborah Madison's Local Flavors. Update 7-29-2023: I've updated my method to minimize/eliminate the exploding corn issues I've experienced in the past. Method is reflected in the recipe below. The batter can be made ahead and chilled in the fridge. Be sure to give it a good stir before frying. I often make a half batch. For a half recipe, I find 1/2 cup of flour works well. And depending on how juicy the corn is and what kind of flour I'm using, I use 2 to 3 eggs. If you don't like cilantro, feel free to omit it or to use another herb or more scallions. I've made a half batch with 8 scallions and no cilantro, and it was delicious.

Hope some of you had a wonderful festival n some still enjoying the special occasion with friends n family sharing all delicious Prasad :) I am still getting ready for the pooja, planned everything for evening. So today bit busy with other things, not in a mood to blog but have to post for the final day of blogging Marathon. As I prepared the recipe in advance its now easy for me to simply write the recipe and post. Onion Masala Buns is more or less similar to Khara Buns/Savory Buns in taste, with the addition of more onions but this is really more soft like my Garlic Buns since I followed the same recipe. This recipe is slightly adapted from Gauri's Masala Bread recipe. Thanks Gauri for the recipe/idea it turned out so delicious and we enjoyed it a lot. These buns are great for tea time snack, even it tastes good when dipped in hot tea/coffee. Do give it a try n let me know how it turned out. Now off to the recipe. Ingredients Whole Wheat Flour 2 cups All Purpose Flour/APF 1 cup Rapid Rise Yeast 3 tsp Salt 1/2 tsp Baking powder 1/2 tsp Sugar 2 tbsp Milk 1 and 1/4 cup(Luke warm milk) Oil 2 and 1/2 tbsp Onion 1 medium (finely chopped) Green chili 1 or 2 no.(finely chopped -optional) Garlic 3 cloves(finely chopped) Cumin seeds 2 tsp Cilantro 1 tbsp + 1/2 tbsp for garnishing Thinly sliced onions 3 tbsp for garnishing Chili powder/Paprika 1/2 tsp or less for garnishing Method In a medium sized bowl, mix warm milk, sugar n yeast and allow to rest for 10 minutes or until it tunrs frothy. Meanwhile, in another bowl, mix whole wheat flour, APF,salt,baking powder and stir well and keep ready. Once the yeast mixture turns frothy, add oil and mix it then add the prepared flour mixture. Now add finely chopped onions,cilantro,garlic n cumin seeds, mix everything well and now the dough turns to be a very sticky dough. Grease your hands with oil, and on a well floured surface knead the dough for 3-4 minutes to a smooth n pliable dough. Now grease the bowl with 1/2 tsp oil and keep the kneaded dough n smear few more drops of oil in top of the dough and cover the bowl with damp cloth or cling wrap and rest it for 1 hour or until it doubles in size. Meanwhile grease or line a baking tray with oil/cooking spray and keep ready. Once it has raised in its size, punch down the dough and knead for a minute and divide the dough in to 10 big lemon sized balls and arrange it on a lined baking tray by 2" apart. Then allow this to raise for 20 minutes, Preheat oven to 400 degree Fahrenheit. once done brush the top with milk or egg wash and sprinkle sliced onions n chili powder and chopped cilantro and bake it for 15-20 miutes or until the top turns golden brown, when u tap the top of buns u hear the hollow sound then its done. Notes: U can make this buns either using whole wheat flour alone or APF alone. I used egg wash( one egg + 2 tbsp Milk mixed together n used for brushing). These buns are so soft n u can also enjoy it with some Pav bhaji masala. The tempering added on top of the rava dhokla after it is cooked is the master stroke, as in the case of any dhokla recipe. It gives the semolina dhokla a fabulous aroma and special flavour. This recipe does not require any fermenting time making Rava Dhokla (Suji Dhokla) an amazing option for quick breakfast or evening snack. I would like to share some important tips to make the perfect no fermentation rava dhokla. 1. Just before steaming the Rava Dhokla (Suji Dhokla), add the fruit salt and 2 tsp of water. Don’t mix it vigorously, just gently fold in so, that the air bubbles do not escape. Fruit salt provides a spongy, fluffy texture. 2. Pour the semolina dhokla batter immediately into a 175 mm. (7”) diameter greased thali and shake the thali clockwise to spread the batter in an even layer. Remember after adding the fruit salt, pour it immediately in the thali and don’t let the batter sit idle for long. Serve suji dhokla with peppy green chutney to make a yummy snack. Dhoklas are also a good accompaniment with Aamras, Puris and Karela Bateta Nu Shaak.
