This is a fantastic dish from southern Italy that the Sicilians are super proud of – and so they should be – it’s a complete joy to eat. Mijn jammerlijk gefaalde poging om thuis cantharellen of iets dergelijks te kweken, dat moet ook alweer een jaar of vier geleden zijn. Toen was dat met een koker van piepschuim welke je moest inprikken en in de kelder plaatsen. Vervolgens zou de natuur het zware werk overnemen en was het aftellen naar een heerlijke oogst. Die oogst bleef uit en ‘het ding’ werd naar de prullenbak verwezen toen een niet al te frisse geur in de kelder de bovenhand. Aan schimmels geen gebrek maar de verhoopte paddenstoelen bleven uit. Jammer! Nee, doe dan maar de leuk vormgegeven oogstbakjes – kijk, dat is in de vorm van een champignon – van Archi.Duc. Nooit gedacht dat ‘champignonspotten’ een hobby zou kunnen zijn, maar die kleine rakkers, die schieten dus werkelijk als euhm, paddenstoelen uit de grond. Amper drie dagen na ontvangst van mijn pakket zagen de potten er zo uit. Archi.Duc - paddenstoelenkweekset Zo'n kraakverse champignon, daar moet je gewoon je tanden een keertje in gezet hebben. Met wortel en al uit het kweekbakje trekken, voetje afsnijden en klaar. Ideale gelegenheid ook om dat fijne Opinel champignonmesje boven te halen. Tot drie keer 250 gram zou je met de Archi.Duc kweekset kunnen oogsten, afhankelijk van de omstandigheden. Mijn eerste oogst kastanjechampignons ging alvast vlot boven de 250 gram. Zo'n 318 gram om precies te zijn, waarvan na het opkuisen een 280 gram overbleef. De Parijse deden het een ietsje minder en hadden ook meer tijd nodig. 245 gram netto bij de eerste pluk, een dag later kwam daar nog een kleine 50 gram bij. Onderstaande foto op instagram oogstte naast lof ook commentaar van de bedenker achter de kweekbakjes. "Dat ik de champignons vooral niet te groot mocht laten worden, dat put immers de veengrond uit". De tips en tricks op de website zijn een handige tool, al had ik die misschien voor het oogsten moeten doornemen. Archi.Duc - Champignonoogst, Opinel mesje Champignons kweken! En dan te weten dat die in een niet zo ver verleden nog met stip op één genoteerd stonden in mijn lijstje 'dingen die ik niet lust'. In ieder geval, plots hadden we een kleine karrenvracht aan verse champignons ter onzer beschikking. Een risotto al funghi leek een evidentie, ik draaide wat champignons in een pastagerechtje en ook kort opgebakken met een fijngesnipperd sjalotje en knoflook waren ze meer dan lekker. Archi.Duc - Champignonoogst Nadat we de op de kweekbakjes meegegeven instructies nauwgezet volgden, verdwenen deze voor enkele dagen de kelder in. Een herfstsimulatie heet dat! Ondertussen staan ze terug op het aanrecht en het eerste dat opvalt is dat het allemaal wat minder vlot gaat. Er lijken minder champignons door te komen. Misschien dat de onderliggende veengrond effectief uitgeput is. 'Eigen schuld'... denk ik dan. Binnenkort nog eens naar de Carrefour fietsen - daar zijn ze voorlopig exclusief te verkrijgen - om zo'n bakje op de kop te tikken. Voor 4,99 € ben je niet alleen verzekerd van een spannend groeiproces, er zijn natuurlijk ook nog de champignons. Vanaf mei ook in andere supermarkten verkrijgbaar. Welke juist, dat is voorlopig ook voor mij nog een raadsel.
