When Cornish miners migrated to Michigan's Upper Peninsula in the 1800's, they brought with them their beloved national dish: the pasty. The Finnish miners that followed adopted these meat pies as their own (easily transportable for long subterranean days!), and the pasty became such a large part of the regional culture that there's an annual pasty festival in early July. In this recipe, beef, rutabaga, carrots, onions and potatoes are essentially steamed within the crimped, D-shaped dough pocket that's slit to allow just enough steam to escape.

I could not have made this recipe without the help and tutelage of the Sessa family that runs Ferrara s Bakery here in Manhattan. I grew up eating this pastry at their store and it has been a part of my dessert favorites ever since the first time I ate it. I can remember the first time I bit into this pastry, standing on Grand Street, I felt as if my life had changed. So good. It is difficult to make but really rewarding.
Bavarian beer halls really are something to experience. They are huge spaces seating hundreds and sometimes thousands of drinkers. The food and drink is on a large scale, beer comes in liter glasses (no halves available) and the portions of food are huge. Staff are dressed in traditional costume and are on hand serving beer, pretzels and huge chunks of meat--ham hocks, meatballs and dumplings. The umpah band plays and the atmosphere is boisterous. The most traditional dessert is the dampfnudel: a dumpling made from sweetened bread dough and served with vanilla custard. Dampfnudel are steamed rather than baked, resulting in a cake-like texture. By themselves, they are fairly plain, so I stuffed them with cherries, but a stewed apple filling would be equally delicious.
These oozing decadent treats were my sister Sonya's favorite when we were kids. I love the fried dough's toothsome texture and the sweet filling. I've jazzed up my recipe making a salted caramel version. Feel free to make up your own version as well -- I've seen these pancakes with everything from walnuts and honey, to sesame seeds inside. You'll love the texture. In each bite you'll crunch through a crispy golden crust, then through a chewy dough, and finally into to a gooey center.
