Quando vedo le ricette di brioche francesi non so resistere, mi attirano tantissimo, già mi immagino la morbidezza e il profumo del burro. Questa in particolare ha catturato la mia attenzione, l'ho travata su questo blog francese di cui ringrazio tantissimo l'autrice, perchè è di una bontà assurda! Brioche profumatissima, mollica filante, sofficissima, e poi le gocce di cioccolato che la arricchiscono la rendono una di quelle preparazioni da fare e ripetere. L'ho fatta ieri sera per provarla a colazione, e chiusa nei sacchetti per alimenti si è conservata perfettamente morbida. Ci è piaciuta così tanto, i bambini in particolare ne erano entusiasti, che l'ho rifatta stamattina, merita di stare sul blog. L'unica modifica che ho apportato alla ricetta è che ho ridotto la quantità di lievito di birra. Si allungano di pochino i tempi di lievitazione ma la brioche ne guadagna. Consiglio questa ricetta, provatela e ne sarete conquistati. Ricetta 320 g di farina 0 forte (io da 350 W, ma va bene una manitoba) 150 g di latte tiepido (a temperatura corporea, non caldo) 8-10 g di lievito di birra fresco(a seconda dei tempi che avete a disposizione, io ho provato con entrambe le quantità) 75 g di zucchero 5 g di sale 70 g di burro Lurpak a temperatura ambiente 1 uovo Per la farcitura 100 g di gocce di cioccolato Sciogliere nella ciotola della planetaria il lievito con il latte tiepido, 15 g di zucchero e 150 g di farina presi dal totale. Mescolare, coprire con pellicola, e fare riposare per 40 minuti se usate 8 g di lievito o 30 minuti se ne usate 10 g. Ora le temperature sono calde, in inverno fare i dovuti aggiustamenti. Aggiungete la farina e lo zucchero rimanenti, l'uovo, e mischiate tutto con la foglia, aumentando un poco la velocità dopo che si sarà tutto ben amalgamato. In questo modo l'impasto si staccherà dalle pareti della ciotola e assorbirà meglio il burro, rimanendo omogeneo. Rallentare la velocità e unire il burro tagliato a cubetti poco alla volta, facendolo assorbire prima di aggiungerne altro. Aumentare la velocità e fare incordare, per ottenere un impasto liscio, omogeneo, e che si stacchi dalle pareti della planetaria. Cambiare gancio sostituendo l'uncino alla foglia, aggiungere il sale e fare amalgamare. Formare una palla e mettere l'impasto coperto con pellicola a lievitare fino al raddopio (per 2 ore circa se si sono usati i 10 g di lievito, o per 2 ore e mezza - 3 se si sono usati gli 8 g). Dividere l'impasto in 5 parti, ognuna del peso di 134 g circa, e formare delle sfere. Prendere una sfera, appiattirla in un disco, cospargere con 20 g di gocce di cioccolato, e portare verso l'interno due lempi di impasto, facendoli toccare ma senza sovrapporli. In questo modo si sarà formato una specie di rettangolo di impasto, che va arrotolato su se stesso. Usare uno stampo da plumcake di 30 cm x 11 cm, foderarlo con carta forno bagnata e strizzata, e mettere all'interno il primo rotolino di impasto. Procedere allo stesso modo con le altre 4 porzioni. Queste dosi sono perfette per uno stampo di questa dimensione, contiene 5 rotolini. Fare lievitare fino al raddoppio, che con il mio stampo è coinciso con il bordo. Spennellare con latte, cospargere con gocce di cioccolato, e cuocere in forno caldo a 170° per 5 minuti, poi a 160° per circa 20-25 minuti.
