These are my favorite pickles. I bought a jar of them once and loved them so much I soon after ordered a case. Once Andrea taught me how to make pickles, this was a no brainer. We usually just eat them out of the fridge all day, but they also make a nice addition to a cheese plate. It should also be noted that these are cheap and easy to make. Fancy pickles in the grocery run you 8 bucks. Depending on the price of brussels sprouts, this easily costs you half that. Ingredients 1 pound brussels sprouts (for this, smaller is better) 1 jalapeno (sliced) 3 heads garlic (sliced) 8-12 black peppercorns pinch chili powder few springs dill (torn up) few squirts hot sauce (or more) few shakes red chili pepper flakes (or more) 1.5 cups white vinegar 1.5 cups water 1.5 tablespoons salt Preparation Trim and then boil brussels sprouts for 7 minutes. Most pickles don't need to cook, but brussels sprouts need it. In a separate pot, add rest of ingredients and bring to boil. Drain brussels sprouts and put in container. Pour over pickling liquid and let cool. Refrigerate. Ready to eat after a few hours but better overnight. They keep for several weeks.

Que les choses soient claires, je ne vais jamais dans les fast food. Mc Do, Quick et compagnie n'ont pas la chance de me voir pousser leurs portes. Je ne dis pas que je n'y suis pas allé un jour mais c'était il y a bien longtemps. Je crois que je préfère sauter un repas plutôt que d'aller dans ce genre d'endroits. Pas mon truc. Pas confiance. Je ne suis pas non frites surgelées, ni mayo en sachet, ni ketchup en général. Mais l'autre jour, j'avais un reste de tomates cerises en boîte et je me demandais ce que j'allais bien pouvoir en faire. Me connaissant, je n'ai pas voulu remettre ça au lendemain car la dite boîte allait se retrouver à la poubelle. J'ai pensé aussitôt à un ketchup maison. Je ne sais pas d'où m'est venue cette idée saugrenue. J'ai donc improvisé ma version de cette fameuse sauce américaine aigre douce au gré des mes envies. Une petite sauce très rouge et vraiment délicieuse que vous allez voir traîner sur des recettes à venir... parce qu'il n'y a pas que les frites qui se mangent avec du ketchup. Quand le cuisinier recycle des tomates en boîte, il prépare un ketchup à sa façon! Préparation: 15 minutes Cuisson: 20 minutes Ingrédients: - 250 g de tomates cerises en boîte - 100 g de poivrons en boîte (pimientos del piquillo) - 1 oignon - 1 gousse d'ail - 3 cuillères à soupe de double concentré de tomate - 1 cuillère à café d'origan (ou de thym)séché - 1 cuillère à soupe de vinaigre balsamique - 2 cuillères à soupe de sirop d'érable - 1 pincée de piment - sel, poivre Pelez et hachez l'oignon et l'ail. Faites-les suer 5 à 6 minutes à la poêle avec une cuillère à soupe d'huile, sur feu modéré sans les laisser colorer. Ajoutez les tomates et les poivrons (coupez ces derniers en morceaux avant). Laissez mijoter 10 minutes en augmentant le feu. Ajoutez le sirop d'érable, le concentré de tomate, l'origan et le vinaigre. Poursuivez la cuisson 2 minutes. Le tout doit avoir réduit. S'il y a encore beaucoup de liquide, laissez cuire quelques minutes supplémentaires. Assaisonnez avec du sel, du poivre et du piment. Mixez le tout très finement. Goûtez et rectifiez l'assaisonnement si besoin! Laissez le ketchup refroidir avant de le verser dans un pot en verre propre. Après, il ne vous reste plus qu'à trouver quoi tremper dedans... Je vous donnerai quelques idées dans les jours à venir! Variante: vous pouvez remplacer le sirop d'érable par du miel ou même du sucre (si vous mettez du sucre, comptez seulement une cuillère à soupe).
