Przepis na oponki z serem białym. Są bardzo smaczne, lekkie i pulchne. Podczas smażenia ładnie rosną. Pokuszę się o stwierdzenie, że to najlepszy przepis na oponki, jaki znam. Przepis pochodzi ze strony: Wielkie żarcie.
O matko jak ja kocham te pączki! Są zupełnie inne niż tradycyjne, puchate pączuchy. Równie mięciutkie, ale też niesamowicie wilgotne i rozpływające się w ustach. Z czego wynikają różnice zarówno smakowe, jak i wizualne? Ano z faktu, że pączki hiszpańskie robimy z ciasta parzonego, a nie drożdżowego jak w przypadku tradycyjnych pączków. Do tego są dużo szybsze i łatwiejsze w przygotowaniu (pod warunkiem, że zaopatrzymy się w odpowiedni sprzęt, ale o tym za chwilkę ;)). Przygotowanie zajęło mi zaledwie półtorej godziny. Nie wymagają wyrastania i nadziewania, do tego prezentują piękny kształt. Jak ktoś mnie pyta „a jakie to są te pączki hiszpańskie” to mówię, że to takie mini opony od traktora :D Nic nie poradzę, że w mojej wyobraźni bliżej im do opony niż gniazdka :) Niestety nie znalazłam informacji skąd taka rozbieżność w nazewnictwie i do końca nie jestem pewna, która nazwa jest prawidłowa – pączki hiszpańskie, pączki wiedeńskie czy gniazdka poznańskie? Jeśli ktoś z Was zna odpowiedź na to jakże nurtujące mnie pytanie, niech rozwieje moje wątpliwości :) Przepis pochodzi z Moich Wypieków, większość korzysta właśnie z tego przepisu i dość często powtarza się on w Internetach :) Na MW wyszło 25 pączków, u mnie 16 :) Ale za to jakich dużych! Tak naprawdę tylko od Was zależy, ile i jak dużych pączków Wam wyjdzie :) Składniki (na ok. 16 – 20 pączków – zależy od wielkości szprycy): Ciasto parzone: 250 ml wody 200 g mąki pszennej 100 g masła 4 jajka (M) szczypta soli Lukier: 200 g cukru pudru 2 łyżki soku z cytryny 2-3 łyżki gorącej wody Dodatkowo: minimum 1l oleju rzepakowego do smażenia Potrzebny sprzęt: – Szeroki garnek o grubym dnie (sami musicie dobrać z Waszej kuchennej kolekcji, w garnku muszą zmieścić się 3 pączki jednocześnie, a po wlaniu oleju, musi być go na tyle, by pączki swobodnie pływały) – Szczypce lub łyżka cedzakowa do wyjmowania i przewracania pączków – Mocny rękaw cukierniczy do wyciskania ciasta (najlepiej materiałowy lub z grubej folii) – Odpowiednia końcówka (tylka), by wyszły piękne duże pączki – u mnie tylka M1 Wiltona. Tylka może być mniejsza – ale o tym już dalej we wpisie :) – Papier do pieczenia pocięty na kwadraciki Wykonanie: Ciasto: masło umieścić w rondelku razem z wodą. Dodać sól. Doprowadzić do zagotowania (masło musi się całkowicie rozpuścić). Wsypać mąkę i energicznie mieszać, aż ciasto zrobi się jednolite, mięciutkie i tłuste i bez problemu będzie odchodzić od garnka, a na dnie zrobi się biały osad. Odstawić do przestudzenia na ok. pół godziny. Po tym czasie wlać wbijać kolejno jajko po jajku, każdorazowo dokładnie miksując. Odstawić do ostudzenia, gdyż ciasto w momencie pieczenia nie może być ciepłe. Przełożyć do rękawa cukierniczego z odpowiednią końcówką (u mnie tylka M1 Wiltona, jeśli takiej nie macie, możecie użyć zwykłej otwartej gwiazdki, ale największej jaką macie). Przygotować wycięte z papieru do pieczenia kwadraciki wielkości ok. 10x10cm. Na każdy kawałek papieru wyciskać okręgi z ciasta. Przy dużej tylce jak moja M1 wystarczy jeden okrąg, przy mniejszych tylkach można zrobić dwie warstwy ciasta, jedna na drugiej, żeby pączki nie wyszły cienkie jak hula-hop :) W szerokim garnku rozgrzać olej (ja grzałam na indukcji na 8, gdy olej rozgrzał się zmniejszyłam na 6 i tak smażyłam resztę). Pamiętajcie, że kuchenka kuchence nie równa. Dodatkowo, indukcja znacznie różni się od kuchenki elektrycznej czy gazowej i jeśli nie posiadacie termometru musicie pilnować temperatury oleju. Pączki kłaść na olej papierem do góry, chwilę smażyć z papierem, po czym delikatnie go odczepić od ciasta. Smażyć do zezłocenia (ok. 3 minuty, ale kontrolujcie), po czym odwrócić na drugą stronę i tak samo smażyć. Wyjmować łyżką cedzakową na ręcznik papierowy. Lukier: najlepiej przygotować go wcześniej. Wszystkie składniki wymieszać. Jeszcze ciepłe pączki zanurzać kolejno wierzchem w lukrze i układać lukrem do góry na kratce, by jego nadmiar ociekł. Pozostawić do zastygnięcia lukru. Smacznego!
