John Albert Bauer (1882 – 1918) was a Swedish painter and illustrator. His work is concerned with landscape and mythology, but he also composed portraits. He is best known for his illustrations of early editions of Bland tomtar och troll (Among Gnomes and Trolls), an anthology of Swedish folklore and fairy tales. (Walnut-Top, Poppy Seed- Bottom L, Apricot- Bottom R) In my house, the week leading up to Easter is a baking extravaganza. And the same busyness was mirrored yesterday at the East European Market in State College. Dessert fillings were flying off the shelves and Easter breads were on sale all throughout the store. I bought as much lekvar as I could carry and restocked my supply of poppy seed filling. Kiffles are traditionally thought to be Hungarian and have been a favorite of mine ever since I was little. At home, we usually stuff them with walnuts, apricot, lekvar and/or poppy seed filling. Although they are considered cookies, I'd stay they are more like pastries. We use a cream cheese based dough which becomes buttery and flaky after baking. Ingredients: For the dough: Cream Cheese--- 6 OZ All Purpose Flour--- 2 CUPS Salted Butter--- 1 CUP (2 sticks) Water--- As needed For the filling: Walnut Filling--- Recipe HERE Apricot Preserves Lekvar Poppy Seed Filling--- Recipe HERE STEP BY STEP: Dice chilled butter and combine with cream cheese using a hand blender Add flour 1/2 CUP at a time and mix until ingredients are combined. Add a little water to the dough if it is still not completely pliable. Knead dough until smooth and not sticky. Wrap in wax paper and refrigerate dough for at least 2 hours (can be refrigerated over night) Preheat oven to 350F Once time has passed, flour a work surface and rolling pin. Roll out dough to about the same thickness as you would a pie crust With a pizza cutter, make 2"x 2" squares from the dough Scoop 1 TSP filling per each square. Fold dough edge over edge (it helps so wet edges with water) Line a baking pan with parchment paper and bake kiffles at 350F for 15 minutes Remove from oven and let cool.

I love this during the holidays. I first received some as a gift in a jar and enjoyed every bit of it, especially on toast or on homemade rolls or lefse. Make some for yourself and some to share with others.

On to Christmas via Thanksgivings over and Black Friday and we can now concentrate on Christmas. I really really don't care for Black Friday and I REALLY hate it that everyone is opening now on Thanksgiving night for it. That is just wrong. Everyone says..."Oh...only those that want to work have to." But that is not true....from my experience EVERYONE is required to work because its so darn busy. My opinion on this is that it's the HAVE's deciding the HAVE NOT's should spend their Holiday servicing the HAVE's. I didn't decorate last year for the first time ever and I'm ready to get to it this year. via I'm digging these pink Christmas trees. via I actually have one like this that I've had for several years and its never been out of the box. This is a classic Polish cookie that my mom and Bushia used to make at Christmas time. I've found that this is a really hard dough to work with, but it is from the original Polish recipe translated into English. These are not really sweet cookies, but they get most of their sweetness from the powdered sugar on the outside.
Kalács is a Hungarian sweet bread similar to brioche baked in a braided form and it is typical for Easter, but in our family it may not be missed during Xmas time. Similar braided breads are popular in other Eastern European countries as well. However you do not need any kind of holiday to enjoy this light bread! Ingredients: 1 kg flour 80 g sugar 100 g butter 800 ml milk 30 g fresh yeast 1 teaspoon salt Heat milk until lukewarm. Crumble yeast and sprinkle about a teaspoon of sugar over it, then pour 100 ml lukewarm milk over it. Mix flour with salt and the rest of the sugar. Pour yeasty milk into a mold in the flour and start kneading, while adding the rest of the milk. As soon as the dough seems to come together and it is almost smooth add lukewarm, molten butter and knead until smooth. Let it rest in a warm place for an hour. Cut in three pieces and form one 26 cm kalács and two small ones. Put each in baking paper covered cake molds and let it rise for another half an hour. Bake for about an hour (the smaller ones might need 10-15 minutes less) over 160°C.
