These cassava banana muffins have been a hit at my house. They are even toddler-approved. Are you familiar with cassava flour? It is made from the root of the cassava plant, a staple crop in South America and parts of Asia. It is gluten-free and paleo friendly! The best part is that it actually behaves almost like wheat flour. My first thought was to make some banana chocolate chip muffins with the cassava flour. I ended up going with banana almond instead to break free from all the candy we've had around here since Easter. Here are the details you need to bake these muffins at home: Ingredients: 1.5 cups Bob's Red Mill cassava flour 3 large bananas 1 egg 1/2 tsp baking soda 3/4 tsp baking powder 1/4 tsp salt 1/2 cup almond butter 1/2 cup unsweetened almond milk 1 tsp almond flavor *************************************************************** Preheat the oven to 350F and grease the bottom of your muffin tray. Peel and mash the bananas. Mix the dry and wet ingredients in separate bowls. Combine the wet and dry ingredients together. This mix is enough for 10 muffins. Bake the muffins at 350F for 20 minutes or until a knife comes out clean. Allow the muffins to cool on a rack. Freeze immediately or store in the fridge in an airtight container for a few days.
