Este é o meu primeiro Paris-Brest, uma sobremesa clássica da pastelaria francesa, que nasceu em 1910, criada por um pasteleiro chamado Louis Durand. A sua forma foi inspirada numa roda de bicicleta, em homenagem à corrida de ciclismo que ligava as cidades francesas, Paris e Brest. Originalmente é preparado com massa choux e recheado com creme praliné mas várias versões foram surgindo ao longo dos anos. A minha inspiração para esta receita veio da querida Patrícia que faz os Paris-Brest mais lindos. Usei a mesma receita base da massa choux e apenas alterei o recheio ao meu gosto. Optei por um creme simples de mascarpone com sabor a pistácio, que adoro, a contrastar com a acidez das framboesas. Fica uma sobremesa bastante elegante, fresca e nada enjoativa. Perfeita para estes dias que agora começam a aquecer. Paris-Brest de Pistácio e Framboesa (receita adaptada do blog Coco e Baunilha) Ingredientes: {Massa Choux} | 125 ml de água | 125 ml de leite | 100 g de manteiga | 1 c. (sopa) de açúcar em pó | 5 g de sal | 150 g de farinha s/ fermento | 4 ovos | 1 ovo batido p/ pincelar | amêndoas palitadas {Creme de Pistácio} | 500 g de Mascarpone | 200 ml de natas frescas (c/ 35% m.g.) | 4 c. (sopa) de açúcar baunilhado em pó | 1 c. (sopa) de pasta de pistácio | 200 g de framboesas | açúcar em pó p/ polvilhar | pistácios picados Preparação: 1 . Leve um tacho ao lume com a água, o leite, a manteiga o açúcar e o sal. Aqueça até levantar fervura e nesse momento junte a farinha de uma só vez. Mexa muito nem com uma espátula ou colher de pau, até a massa descolar completamente do tacho e a colher. 2 . Junte os ovos, um de cada vez, mexendo bem entre cada adição, até ficar homogéneo. 3 . Pré-aqueça o forno a 200ºC. Trace um círculo de 20 cm numa folha de papel vegetal, usando um prato ou aro desse tamanho. Volte a folha ao contrário num tabuleiro de forno ligeiramente untado nas extremidades (para a folha não levantar durante a cozedura). 4 . Transfira a massa para um saco de pasteleiro com uma boquilha redonda ou em estrela e de abertura larga. 5 . Por cima do círculo desenhado forme duas coroas de massa que deverão ficar juntas e de seguida forme uma terceira coroa por cima das duas primeiras, ou seja, no centro das mesmas. 6 . Pincele com o ovo batido e polvilhe com a amêndoa palitada (ou laminada). Leve ao forno a 200ºC e passados 10 minutos reduza a temperatura para 180ºC e deixe ficar por mais 20 minutos ou até ficar volumoso e bem dourado (não abrir a porta do forno). Desligue e deixe arrefecer dentro do forno com a porta entreaberta. 7 . Prepare o recheio, batendo o mascarpone e as natas durante alguns minutos até ficar bem firme. Adicione o açúcar baunilhado em pó e a pasta de pistácio e bata mais um pouco até ficar homogéneo. 8 . Com uma faca de serrilha corte o paris-brest no sentido do comprimento, a 2/3 de altura (ou seja, deixando a parte de baixo mais alta, a fim de ser recheada). 9 . Coloque a base num prato de servir e de seguida distribua o recheio, usando o saco de pasteleiro e uma boquilha em estrela larga. 10 . Distribua as framboesas sobre o creme de pistácio e também de lado e cubra o paris-brest com a segunda metade de massa choux. Polvilhe com açúcar em pó e pistácios picados e leve ao frigorífico, pelo menos meia hora antes de servir.
