Родопите са мистична планина, която и до днес владее въображението на жителите и посетителите си не само с магнетичната си природа, древни тайни, забулени в митове и предания, но и с легендарната си кухня. Едно от традиционните родопоски ястия е „Пататникът“ - известен в някои райони и като „Патетник“, според местното наименование за картофите - патати или патети. И тъй като много обичам рецепти с история, ми се искаше да попадна на красиво предание за корените на това уникално българско ястие, които да се простират до Орфей и Евредика, но уви – патаникът е по-скоро рожба на нелекия живот в Родопите, а не на древни романтични или страховити истории. Хората от планината са били подтикнати от трудното си ежедневие да сътворят от простичките и достъпни за региона продукти гозба, с която дните им да се преглъщат по-леко и животът им да е по-вкусен... Удивително е как народният гений е съумял от несгодите и недоимъка да сътвори този уникален кулинарен шедьовър! Пататниът е ястие, което се приготвя на тиган, в тава върху печка с дърва или във фурна от настъргани картофи, лук, сирене, яйца и джоджен, като майсторлъкът е основно в печенето – трябва да е на бавен огън, за да не останат картофите сурови – и да е с хрупква коричка. Може да бъде запечен в тесто или точени кори, като някои от продуктите могат да се пропуснат или заменят – вместо яйца и сирене, да се приготви с кашкавал, или да се добави и магданоз... Приготвено без кори – ястието се нарича „Гол пататник“, а приготвено с гъби – „Горски пататник“. Съществува дори и рецепта за „Варен патаник“, но майсторите му усърдно я крият и отказват да я споделят с останалия свят :) Рецептата е част от кулинарния проект La Vita e Bella Необходими продукти: 6 бр точени кори Белла 800 г картофи, настъргани на едро и отцедени от водата, ако са по-воднисти 2 средно големи глави лук, нарязани на ситно 2 яйца, леко разбити 150 г сирене, настърхано на едро 100 г кашкавал, настърган на едро (по избор) 60 г краве масло Белла, разтопено 1 ч.л. сух джоджен, или на вкус 1/2 ч.л. прясно смлян черен пипер, или на вкус 1 ч.л. едро смляна морска сол, или на вкус 1 с.л. едро нарязан свеж магданоз, по избор Начин на приготвяне: В голяма купа смесете едро настърганите картофи, нарязания лук, настърганото сирене, кашкавала, яйцата, солта, пипера, джоджена и магданоза и разбъркайте. Намажете тиган с тежко дъно с част от маслото. Покрийте добре дъното на тигана с 4 от точените кори, като оставяте част от корите да висят извън тигана и намажете с масло. Изсипете плънката и притиснете, за да се оформи - и поръсете с масло. Покрийте плънката с останалите 2 кори, завийте с оставените да висят извън тигана кори и намажете с масло. Загрейте котлона на средно-ниска степен: 5 или 6 от 10 (или 2 от 4). Похлупете тигана с капак или друг по-голям съд и запечете на котлона за около час, или до златисто кафяво. Отстранете капака и обърнете пататника в плитка голяма чиния. С приплъзване върнете пататника внимателно обратно в тигана, за да се запече и от другата страна, без да покривате този път с капак - за по хрупкава коричка. След като пататникът е готов, оставете леко да поизстине и поднасете с айрян или кисело мляко.

Facing off against Byzantines, Arabs, Vikings, Turks, Mongols, and Russians, this steppe culture dominated Black Sea and Caucasus trade during Medieval times. The Bulgars were a Turkic people who established a state north of the Black Sea, and who showed similarities with the Alans and Sarmatians. In the late 500s and early 600s AD their state fragmented under pressure from the Khazars; one group moved south into what became Bulgaria, but the rest moved north during the 7th and 8th centuries to the basin of the Volga river. There they remained under Khazar domination until the Khazar Khanate was defeated by Kievan (Scandinavian) Russia in 965. Thereafter the Volga Bulgars - controlling an extensive area surrounding an important hub of international trade - became richer and more influential; they embraced Islam, becoming the most northerly of medieval peoples to do so. Given their central position on trade routes, their armies were noted for the splendour of their armour and weapons, which drew upon both Western and Eastern sources and influences (as, eventually, did their fighting tactics). In the 1220s they managed to maul Genghis Khan's Mongols, who returned to devastate their towns in revenge. By the 1350s they had recovered much of their wealth, but they were caught in the middle between the Tatar Golden Horde and the Christian Russian principalities. They were ravaged by these two armies in turn on several occasions between 1360 and 1431. A new city then rose from the ashes - Kazan, originally called New Bulgar - and the successor Islamic Khanate of Kazan resisted the Russians until falling to Ivan the Terrible in 1552. The costumes, armament, armour and fighting methods of the Volga Bulgars during this momentous period are explored in this fully illustrated study.
