Burnt Sugar Bundt Cake Zucchero liquido bruciato 120 g di zucchero semolato 120 ml di panna 180 ml di latte di cocco 1 cucchiaio e mezzo di succo di limone fresco Per la torta Bundt 330 g di farina 1 cucchiaino di lievito in polvere Mezzo cucchiaino di bicarbonato di sodio 1 cucchiaino di sale 120 g di burro non salato + altro a temperatura ambiente 450 g di zucchero semolato 4 uova grandi 1 cucchiaino di estratto di vaniglia puro Zucchero liquido Bruciato (vedi sopra) Per la glassa Rum Carmelo 120 g burro non salato 2 cucchiai di rum scuro 400 g di zucchero a velo Zucchero liquido Bruciato (vedi sopra) Zucchero liquido bruciato Mettete una casseruola media sul fornello a fuoco medio, per sciogliere lentamente lo zucchero. Utilizzate un cucchiaio di legno per mescolare. Quando lo zucchero è caramellato di un bel colore scuro “caramello” , togliete la casseruola dal fornello e cominciate a versare lentamente la panna sempre mescolando (non preoccupatevi se il liquido “brontola”). Rimettete la casseruola sul fornello sempre a fuoco medio e mescolare per amalgamare il tutto per un paio di minuti. Mettere a questo punto la miscela ottenuta in una ciotola grande e resistente al calore versate il latte di cocco e il succo di limone mescolate per unire bene gli ingredienti, poi dividete la miscela a metà, e mettetele da parte. Fare la torta Bundt Preriscaldare il forno a 170°. Preparate lo stampo - imburratelo ed infarinatelo -. In una ciotola mettere tutti gli ingredienti secchi la farina, il lievito, il bicarbonato e il sale. In un'altra ciotola mettere il burro con lo zucchero e montarlo con la frusta elettrica fino a rendere il composto spumoso e chiaro. Aggiungere le uova una alla volta e continuate con la frusta a montare il composto fino a che tutte non siano ben incorporate. Aggiungere la vaniglia. Riprendere una delle parti dello zucchero liquido bruciato ed incorporarlo al composto alternandolo con la farina. E’ un composto piuttosto denso, versatelo nello stampo e cuocetelo in forno per 50 minuti. Toglietelo dal forno e lasciatelo raffreddare prima di toglierlo dallo stampo Fare la glassa Rum Carmelo Mettete il burro, rum, zucchero a velo, e la parte restante di liquido zucchero bruciato in un robot da cucina. Fate impulsi brevi fino a quando la glassa è lucida e liscia. Utilizzare una spatola per distribuire la glassa sopra la corona del Bundt con un bel spessore.
