Apricot Slice This no-bake Apricot Slice treat is a variation on a number of different recipes. Basic Apricot Slice is great but you may as well indulge a sweet-tooth to the max if you're putting in some effort. That simply means adding white macadamia chocolate bits to the base and complimenting the whole thing with lemon and coconut icing. For the base 250g butter 1 cup brown sugar 1 can condensed milk 2 cups dried apricots, chopped 2 packets plain (wine) biscuits, crushed ½ cup white chocolate, roughly chopped Melt butter, brown sugar and condensed milk. You can melt it in a microwave proof dish for 2 minutes, stir and microwave another minute, then another - and another... or stir in a heavy based saucepan over a low heat until it's a fudgy-brown colour and everything is melted Chop up dried apricots view chopping as active relaxation instead of a chore add chopped apricots to melted butter, sugar and condensed milk mix then add the crushed wine (plain) biscuits If you don't have white chocolate bits, feel free to leave this step out Press the mix you have just made into a tin (20cm x 30cm) - lined with greaseproof paper I omitted this step of the greaseproof paper and had a difficult time getting the slice out of the tin once it had set. For the topping 100g butter 1½ cups Icing Sugar (lemon flavoured) 1-2 Tablespoons hot water ¼ cup coconut grated lemon zest (to your own preference - or leave out if you don't have lemons handy) Beat butter until fluffy and pale Add icing sugar and water until light and fluffy Spread over the slice Sprinkle with coconut and (optional) grated lemon zest put it in the fridge for 2 hours to set Then cut into squares or slice as is and enjoy with a good cup of tea Apricot Fudge Slice There you have it - Apricot Fudge Slice... enjoy

For some reason this is known in the Antipodes (and I got this recipe from a Kiwi) as Russian Fudge and, although I like this name better, I feel that it perhaps leads the rest of us to expect something altogether more exotic, when this is the plain, comforting, yet temple-achingly sweet, confection of my childhood. I confess that even listing the ingredients below makes me hyperventilate slightly. I am no stranger to excess, but even I baulk somewhat at the amount of sugar and so on needed. But it does make an awful lot of fudge: as you can see, my portion control is rather erratic, but I reckon you can get 77 pieces out of it. I also have to preface this recipe with a warning: fudge is not exactly difficult to make, but it is dangerous. Unless you proceed with caution you will burn your pan and yourself. Never leave the pot, and make sure there are no children nearby. Mobile telephones are banned for the duration, too. You need to use your own instinct as to how long to cook the fudge. The recipe I was given indicated it took 20 minutes; my fudge was ready after 12. Just make sure you have a bowl of cold water nearby. Drop small amounts of the molten fudge into the water and if it sets (known as soft ball stage) it's ready. Or you can use a sugar thermometer, which will indicate 'soft-ball stage'. The final whisking is what turns what is a pan of toffee (though you could leave it like this if you want smooth fudge) into grainy texture traditional fudge — or what the Scots call Tablet — demands. I highly recommend adding some sea salt flakes — I imagine two teaspoons should do it — but since I made this for my daughter (and children are nothing if not traditionalists) I didn't dare stray from convention. For US cup measures, use the toggle at the top of the ingredients list.

Hayden, whose new TV show has just started, won’t be “oversalting the daikon” this time – the mistake that cost him a top two spot in season three. Recipe: Ingredients 120g butter ½ c white sugar ½ c brown sugar 1 tbsp golden syrup 1 egg 2 c flour 2 tsp baking powder 2 tsp cinnamon 1 tsp mixed spice about ½ c raspberry jam Method · Cream butter and sugar, then add golden syrup then egg · Mix in dry ingredients · Roll out half of the mixture to cover the base of a 18 x 23cm slice tin · Spread with raspberry jam and then cover with the other half of the mixture rolled to fit (this patches really well) · Bake at 180c for 20 minutes Once cold ice with plain white or pink icing (I used about 2 c icing sugar, 1 tsp butter and enough milk to make a smooth icing, then I added a couple of drops of red food colouring). Sprinkle with raspberry jelly crystals.
