Rock Cakes are British in origin, but where, when, and how exactly they came to be is something that doesn’t seem to be well-known. They’re a popular tea-time treat, and seem to have been around since at least Victorian times. They were also actively promoted by the Ministry of Food during WWII thanks to most Rock Cake recipes using fewer eggs and sugar than a traditional cake. What’s with the name? Well, they’re said to resemble a small rock, as they’re rough in shape. But don’t let that put you off! This potato and cabbage dish is a Scottish version of Bubble and Squeak. 1 lb potatoes, peeled, cooked and mashed 1/4 cup butter, melted 1 tbsp olive oil 1 onion, finely diced 8 oz green cabbage, shredded 1/4 cup fresh chives, snipped 1/2 cup cheddar cheese Salt and pepper Preheat oven to 350 F. Add the melted butter to the mashed potatoes, mix well, set aside. Heat the olive oil in a large, oven-proof frying pan, add onion and fry until soft and golden brown. Add the cabbage and cook, stirring occasionally until cabbage softens. Add the mashed potatoes, season with salt and pepper and stir to combine and heat through. Sprinkle with cheese.
