This potato and cabbage dish is a Scottish version of Bubble and Squeak. 1 lb potatoes, peeled, cooked and mashed 1/4 cup butter, melted 1 tbsp olive oil 1 onion, finely diced 8 oz green cabbage, shredded 1/4 cup fresh chives, snipped 1/2 cup cheddar cheese Salt and pepper Preheat oven to 350 F. Add the melted butter to the mashed potatoes, mix well, set aside. Heat the olive oil in a large, oven-proof frying pan, add onion and fry until soft and golden brown. Add the cabbage and cook, stirring occasionally until cabbage softens. Add the mashed potatoes, season with salt and pepper and stir to combine and heat through. Sprinkle with cheese. Transfer to the preheated oven and bake for 30 minutes or until cheese starts to bubble. Before serving sprinkle with freshly snipped chives. Adapted from http://www.scottishvegetarian.com/
