Zalatimo Sesame and Butter Cookies / Barazik & Ghreibeh
Barazek are middle eastern pistachios sesame cookies. They are popular in some Arabic countries like Jordan, Palestine, Syria, and Lebanon.They are usually served with hot tea or coffee. Ingredients: 2/3 cup Sesame Seeds 1 tbsp Honey or syrup (qater) 1/2 tbsp Water 2 1/2 cups all purpose flour 1 tsp Baking Powder 3/4 cup Sugar 1 cup Unsalted Butter (room temperature) 1/4 cup Water 1/4 cup Pistachios (chopped) Directions: Preheat oven to 350 degrees On a baking sheet, spread out the sesame seeds and toast them until they are golden brown Mix honey with the 1/2 tablespoon of water and moisten the sesame seeds with the mixture In a large bowl, mix flour, baking powder, and sugar. Add the butter and the 1/3 cup of water and work out to form smooth dough Put the dough in the fridge for 10 minutes Form small sized balls from the dough Touch one side of each ball into the pistachios, and then press it between the palm of your hands into a cookie shape Dip the other side into sesame seeds mixture and try to richly coat it Place the cookies on a baking sheet with the sesame side up. Bake in the preheated oven at 350 degrees for about 15 minutes or until they turn golden brown

Nagyon szeretek különböző nemzetek konyháiból ételeket kóstolgatni, kipróbálni, főzni. Ezt a kekszet volt szerencsém először eredeti és ráadásul házi készítésben megkóstolni. Azonnal beleszerettem és természetesen elkértem a receptet is. Nem is vártam sokáig az elkészítésével és otthon is nagy sikere volt. Ez egy szíriai specialitás, az úgynevezett Barazik, szezámos kiadásban. Ugyanis van olyan verzió, amikor a keksz másik oldalát apróra tört pisztáciában is megforgatják. Ahogyan olvasgattam a többi receptet és beszélgettünk is róla, többféle ízesítésben készítik és van, aki tojást is tesz a tésztájába. Nekem így jó, ahogyan van és az ánizsos fűszerezés lett a szívem csücske. Köszönöm a kekszet és a receptjét is Ali! Hozzávalók: 50 dkg liszt 25 dkg vaj (nem margarin!) 17 dkg porcukor 1 csomag vaníliás cukor 1 kávéskanál sütőpor 1/2 kávéskanál fahéj 2-3 (csapott) teáskanál őrölt ánizs 1 evőkanál olaj 1 csipet só kb 10-15 dkg szezámmag Összekeverjük a lisztet a porcukorral, a vaníliás cukorral, a sóval, a sütőporral, a fahéjjal és az ánizzsal. Hozzáadjuk a puha vajat és az olajat majd annyi vizet adunk hozzá, hogy összeálljon a tészta (linzer állagú tésztát kapunk). Érdemes fokozatosan adagolni hozzá a vizet. Hűtőbe tesszük 20-30 percre majd nagyobb diónyi méretű gombócokat formázunk belőlük amit az ujjunkkal vékonyra kilapítunk (nekem az vált be, hogy sütőpapíron tettem meg mindezt, úgy nem ragadt le) és az egyik felét szezámmagba mártjuk. Sütőpapírral bélelt tepsire sorakoztatjuk őket és 160 fokra előmelegített sütőben kb 10 perc alatt megsütjük őket.
