Perfect for a cozy night in! 🍽️❤️ - Balsamic Chicken Breast with Spinach and Tomatoes Ingredients: - 4 boneless, skinless chicken breasts - 2 cups fresh spinach, chopped - 1 cup cherry tomatoes, halved - 1/4 cup balsamic vinegar - 2 tablespoons olive oil - 2 cloves garlic, minced - 1 teaspoon dried Italian herbs (oregano, basil, thyme) - Salt and pepper to taste - Fresh basil leaves for garnish (optional) Directions: 1. Preheat the oven to 400°F (200°C). 2. In a large bowl, whisk together balsamic vinegar, olive oil, minced garlic, Italian herbs, salt, and pepper. 3. Add the chicken breasts to the bowl and coat them well with the marinade. Let them marinate for at least 15 minutes. 4. Heat a large oven-safe skillet over medium-high heat. Add the marinated chicken breasts and sear for 3-4 minutes on each side until golden brown. 5. Once the chicken is seared, add the chopped spinach and halved cherry tomatoes around the chicken in the skillet. 6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). 7. Remove from the oven, garnish with fresh basil leaves, and serve hot. Prep Time: 15 minutes
