LyB of And Then I Do The Dishes selected Chocolate Armagnac Cake as for this week's Tuesdays With Dorie. With the notoriety of this recipe (as noted in the title), I was eager to make this cake. This decadent, almost flourless chocolate cake is made with ground pecans and armagnac-soaked (and flambeed) prunes. I dusted off the bottle of cognac I had on hand (mind you, I think we've had this bottle for 10 years --- I hope it doesn't have a limited shelf life), and it served as a respectable substitution for the armagnac. Of the chocolate cakes made recently (Chocolate Valentino, Devil's Food), I would have to say that this is my favorite. INGRÉDIENTS: 2 Kilos de pruneaux secs 400g de sucre en poudre 1 zeste d'orange 1 gousse de vanille 6 sachets de thé 1 bouteille de jeune Armagnac de 75cl MÉTHODE: Faire fondre dans une grande casserole un litre et demi d'eau, 400 grammes de sucre Mettre une gousse de vanille fendue dans la longueur Mettre le zeste d'une orange bien lavée(je prélève toujours le zeste avec un couteau économe) Mettre 6 paquets de thé attachés ensemble Porter à ébullition, éteindre. Laisser refroidir. Enlever les sachets, les zestes et la vanille. Verser le sirop obtenu sur les pruneaux afin de bien les couvrir Filmer et attendre au moins une nuit Le lendemain, retirer les pruneaux, les faire égoutter Installer les pruneaux dans des bocaux de verre Mesurer alors 1 litre du sirop obtenu et le mélanger avec une bouteille d'Armagnac jeune de 75cl Répartir ce mélange dans les bocaux, bien fermer et, surtout, oublier au moins deux mois. Bien recouvrir les fruits, vous pouvez vous servir aussi du liquide de macération, et si les pruneaux gonflent encore, mettre à niveau avec du sirop.
