I always tend to go over board and so have decided to make every ones presents in the form of little food hampers.This is a really easy recipe for chili jam that I got from Nigella Lawson and this the first addition to food hampers! 150 grams long red chilli pepper 150 grams Red peppers 1 kilograms Jam sugar 600 ml cider vinegar First thing you need to Sterilise your jars and leave to cool, I did this by washing them in boiling hot water and washing up liquid and then put them in the oven for around 10mins on a low temperature. To make the chilli jam first cut-up the chillies and put into a food processor and pulse until they are finely chopped. Next add the chunks of red pepper and pulse again. Dissolve the sugar in the vinegar in a pan over a low heat without stirring and although it is tempting to stir you must make sure you don't! Next you need to add the chilli-pepper mixture into the pan and bring to the boil, then leave it boiling for ten minutes and after that take the pan off the heat and allow it cool- After about 40 minutes or when you can see the jam is beginning to settle ladle into your jars and seal tightly. It's a really easy recipe and looks gorgeous, when it's closer to the time I will cover with fabric, tie a ribbon around them and attach a tag with the date I made the chilli jam.

This is something that I always have on hand in my pantry. I will make it by the litre and store it in large swing-top jars. I give it as gifts at Christmas, or favours at events. My mum will bribe her friends to babysit her cat with promises of it. It is one of those things that is just better when it's homemade, and once you have tried it, you will never settle for mediocre store-bought chilli oil again. The recipe is also very versatile - you can double the quantities or make half, as you wish. Do not use Italian chilli flakes for this recipe (the dark red circular-shaped flakes with seeds); it must be bright red crushed Asian chilli flakes, which are finely ground and have a distinctive colour and flavour. Korean chilli flakes (gochugaru) also work well.

How To Make A Tasty All Natural Strawberry Honey JamINGREDIENTS: 6 lbs of fresh strawberries 3 3/4 cup raw honey 2 small granny smith apples 1 1/2 tablespoons of freshly squeezed lemon juice (about 1/2 of a large lemon)INSTRUCTIONS: As the ingredients boil, skim off the foam and discard.As the ingredients boil, skim off the foam and discard. 1. Hull strawberries and cut in each strawberry in half (or quarters if large), place in a large stockpot 2. Cut the sides of the apples away from the core and grate the apple leaving the skins on. (I used my food processor) Place in pot with the strawberries. 3. Juice a lemon until you get 1 1/2 tablespoons of juice and poor into the stock pot. 4. Pour the honey into the pot and stir. 5. Heat mixture on high until boiling stirring occasionally. As soon as the mixture begins to boil, reduce heat to medium low to simmer. Water bath for 10 minutes, remove from heat and let cool overnight. Water bath for 10 minutes, remove from heat and let cool overnight. 6. Simmer for approximately 15 minutes until the strawberries become soft. Using a potato masher, mash the strawberries so there are no recognizable sections. If you have an immersion blender, you can use this instead.7. Simmer for another 15-45 minutes, stirring occasionally. The longer the mixture simmers, the thicker the consistency. (Remember, this will not be as thick as the consistency made with sugar and/or pectin). 8. Strawberry Honey Jam can either be placed in freezer safe jars, or canned using a water bath for 10 minutes.
