This recipe is one of our favorites from Maangchi's Big Book of Korean Cooking, our December 2019 pick for BA’s Cookbook Club. We like to think of this sweet and salty dish as a sort of vegetarian bulgogi. Marinating and pan-frying eggplant keeps it firm, flavorful, and chewy—almost meaty. The marinade glazes it as it cooks, so it glistens. Prepared this way, the eggplant looks very special, even though the recipe is easy. It’s a versatile dish that makes a great side for rice and many other preparations. The eggplant tastes wonderful right off the stove, but it’s even better after a few hours, when all the flavors have had time to mingle and deepen. Seek out Korean eggplants, if possible, which are sold in Korean markets. They are thinner than ordinary eggplants and the skin is more tender. But regular eggplants work, too.

Serve steaming hot in generous bowls, enjoy the goodness and instantly feel the healing benefits of this magnificent yet simple soup. Ginger is a potent detoxifying and antiviral herb that helps the body get rid of toxins, stimulates circulation and boosts your immune system. It’s regarded as a natural antibiotic for the body and helps to reduce congestion and mucous production. Brown rice is kind to the digestive system and great for people with food sensitivities. It is rich in B vitamins for energy and nurturing for body and soul.

Keema is a fantastically hangover-salving dish of spicy (usually lamb) mince; this version uses minced turkey and, more significantly, its heat is provided by the gochujang, the Korean chilli paste that I keep on hand to pep up a jaded palate or a pallid-flavoured ingredient. Being minced does not generally do turkey many favours, but the aromatic richness of the paste makes it sing. Supper's on the table in a matter of minutes; if you wanted to make it speedier, you would have to buy rice that's already been steamed and needs no more than a few turns in the microwave to heat it.
