薑黃黑芝麻鹽可頌 材料: 法國麵包粉100g 高筋粉150g 薑黃粉4g 黑芝麻5g 速發乾酵母(Instant yeast)2g 黃砂糖10g 海鹽3g 鮮奶100g 冰水70g 無鹽牛油10g 包入用牛油32g(分成8份) 鹽之花適量 做法 : 1) 所有材料混合後(除牛油外),搓至光滑狀。 2) 加入牛油搓至有薄膜狀,滾圓蓋好,發酵至兩倍大。 3) 輕壓麵糰排出氣泡,滾圓鬆弛約10分鐘。 4) 麵糰分成8等份滾圓,鬆弛10分鐘,搓成水滴狀, 捍長,放上牛油(隨喜可放有鹽或無鹽牛油)捲起, 最後約兩倍大。 5) 噴水霧撒少許鹽之花,倒入熱水在陶瓷珠/鑄鐵pan上,放進已預熱焗爐200度焗約15分鐘。 *陶瓷珠/鑄鐵pan要跟焗爐一起預熱, 麵糰入爐後倒些熱水在陶瓷珠上營造蒸氣,約8分鐘後取走陶瓷珠/鑄鐵pan *液體用量因麵粉品牌各有差異,食譜用量只供參考 捲上癮的鹽可頌 刻意的比平常做的再擀長一點 多捲一圈多一點層次 阿對了我仍在薑黃熱啦~哈:P
