Cutting the cauliflower into small pieces allows for more surface area for all that cheesy goodness. Some caramelized onions would be nice folded in, or try switching out the cauliflower for broccoli. I've listed the grated cheese in cups below, but I used 120 grams of cheddar to fold into the cauliflower, and topped it with 25 grams extra.
