Vai para lá de 1 ano que aqui não deixo uma receita. Foram tempos de mudanças, de adaptação a uma nova casa, a um novo espaço e principalmente uma reorganização de tempo que teima em não chegar para tanta coisa que queremos fazer. A Páscoa aproxima-se e à memória vêm receitas antigas, com uma grande carga afetiva muitas vezes toldando a verdadeira opinião sobre as mesmas. Mas este bolo não falha, e se é maravilhoso ainda quente, acabado de sair do forno, é ainda melhor torrado, com manteiga e uma chávena de café a acompanhar! Este moreno perfumou a minha cozinha, a lembrar que faltam 2 semanas para a Páscoa e ainda não pensei nos bolos que vou oferecer. Tal como no Natal, há muitos anos que faço amêndoas caseiras ou folar para oferecer e este ano ainda nem sequer me tinha dedicado a pensar nisso. Deixo a receita, que merece ser testada por vocês! Ingredientes: 500 g de farinha 5 ovos caseiros + 1 gema 1/2 cálice de aguardente 125 ml de azeite 25 g de fermento de padeiro fresco ou 8 g de fermento seco 1 pitada de sal 100 g de açúcar Num copo, deite um pouco de água morna e desfaça o fermento de padeiro. Reserve. Numa taça, deite a farinha, o açúcar e o sal. Mexa. Faça um buraco no meio e junte os ovos batidos, a aguardente, o azeite e o fermento. Mexa para envolver e depois amasse com as mãos ou para facilitar, com a batedeira, por 10 minutos. Forme uma bola, coloque numa taça e tape com um pano. Deixe descansar num local morno e sem correntes de ar, até a massa dobrar de tamanho. Enfarinhe a bancada, deite a massa e dobre as pontas para dentro. Forme novamente uma bola e coloque-a num tabuleiro de forno. Deixe descansar 20-30 minutos. Antes de levar o bolo para o forno pré-aquecido a 180ºC, pincele-o com uma gema batida com uma colher de leite. Se gostar, deite um pouco de açúcar por cima. Deixe cozer durante 30 minutos, confirmando sempre a cozedura antes de o tirar.
