If you’re looking to entertain a crowd on a budget, look no further - this new take on a cob loaf will have everyone heading for the nibbles. In the oven, the loaf goes lovely and crisp around the edges, while the incisions fill with melted cheese as it bakes. We used basil pesto, but you could use any other pesto or even use garlic butter instead of our pesto/butter combo to give it more of a cheesy garlic bread twist. We added the oil from the semi-dried tomato to add flavour (but also to reduce waste). Get-ahead cooks: you can actually assemble the loaf a day ahead. Keep it in foil in the fridge and allow an extra 5 to 10 minutes in the oven before uncovering.
