Ingredients: 1 cup cooked lentils (green or brown) 1/2 cup shredded carrots 1/2 cup diced red bell pepper 1/2 cup diced cucumber 1/4 cup red onion, finely chopped 1/4 cup chopped fresh cilantro 2 tbsp tahini 2 tbsp lemon juice 1 tbsp sriracha sauce 1 tsp cumin powder Salt and pepper to taste 4 whole grain tortillas or wraps 1 cup baby spinach leaves Instructions: In a large bowl, combine cooked lentils, shredded carrots, bell pepper, cucumber, red onion, and cilantro. In a small bowl, whisk together tahini, lemon juice, sriracha sauce, cumin powder, salt, and pepper. Pour the dressing over the lentil mixture and toss to coat evenly.
