Traditional Greek Salad Recipe Total time: 10 minutes Serves: 1-2 Dietary preferences: Vegetarian, Gluten-free, Nut-free Ingredients: 3 tsp olive oil 1 tsp lemon juice ¼ garlic clove, crushed ¼ tsp dried oregano Salt and pepper, to taste 1 medium tomato, cut into wedges 1 medium cucumber, sliced ½ medium green capsicum, sliced ¼ small red onion, sliced 6-8 olives, pitted 40g salt-reduced feta cheese Method: 1. Place the olive oil, lemon juice, garlic and oregano in a small bowl and whisk until combined. Season with salt and pepper, if desired. 2. Place the tomato, cucumber, capsicum, onion and olives in a medium bowl and toss gently to combine. 3. Place the salad in a serving bowl, top with the feta cheese and drizzle with the olive oil dressing. Enjoy!
