So it was that I came to that land in the mountains, Tyrol, mainly known to me as Schiaparelli’s hunting ground for the amusing hats that have lately decorated the heads of most of my women friends. I am hoping that I can be discriminating as she in my captures for this selection of receipts, because it is beyond the imagination of the English to cook to realize the dreadful things in the Tyrolese peasants can do with flour and fat. Here are the receipts hunted in the high Alps, run to earth in the charming cafes, smuggled out of the kitchens of the schlosses, or stripped from the poor peasantry. The receipts that I take from my diary will be for the most part simple, possible to make, pleasing or entertaining to an adventurous palate, and, I hope, interesting to those who have tasted these things in Austria and would like to know the manner of their making.
