Harcha is een heerlijk Marokkaans panbrood wat gemaakt wordt van griesmeel. Ze zijn krokant aan de buitenkant, boterachtig en zacht in het midden. Harcha heeft zijn naam te danken aan zijn ruwe structuur van griesmeel en dat maakt ze zo lekker anders! Als ik aan harcha denk, moet ik meteen denken aan een typisch Marokkaans ontbijt. Naast de sfenj is harcha een van mijn favoriete Marokkaanse ontbijtjes op tafel. Naast het feit dat ze zo lekker zijn, zijn ze heel eenvoudig te maken en snel klaar. Kneed werk zit er ook niet echt in en rijzen al helemaal niet. Het is zo lekker als tussendoortje of nog beter, met een warm kopje verse ne3 ne3 thee (muntthee). Gebruik altijd een pan met dikke bodem voor de beste en lekkerste harcha (anagdhem). Je kunt ze groot maken of klein. Ik hou juist van kleine ronde porties, omdat je ze dan gemakkelijk kunt delen en vullen. De dikte is aan jou. Hoe dunner je de harcha maakt, hoe krokanter en minder luchtig ze worden. Ik hou het graag bij 1 tot 1,5 cm, omdat ik mijn harcha het lekkerst vind wanneer de vulling heerlijk zacht is. Je kunt harcha simpelweg vooraf maken en invriezen als geen tijd hebt (pak het wel luchtdicht in). Warm het weer lichtjes op in de oven op 180 graden voor een paar minuten en ze zijn ready to eat. Harcha kan variëren van recept tot recept en kan op verschillende manieren worden geserveerd. Je kunt zowel gaan voor hartig als zoete vullingen. Mijn persoonlijke voorkeur gaat uit naar honing en boter, dat vind ik zo lekker! Harcha is wel zacht wanneer ze warm zijn, dus wacht even geduldig met aanvallen en laat ze eerst even afkoelen voordat je begint met snijden om ze te vullen. Serveer de harcha met honing, boter, jam, pindakaas, roomkaas, Nutella, kaas of een heerlijke mix van honing en boter (warm het wel op, 50/50). Ga hier lekker rustig voor zitten, pak je moment en geniet ervan.
