Wenn der Werbung liebstes Wort *Neuheit* mich irgendwo ganz besonders abschreckt, dann wenn ich einen Gartenkatalog durchblättere. Ich brauche keine blauen Rosen, keinen gefüllten Mohn, keine gestreiften Tulpen, keine lilanen Mailglöckchen, keine weißen Erdbeeren, keine Kreuzung aus Himbeeren und Brombeeren uswusf. Würde man die Artenvielfalt nur irgendwie erhalten wollen, bräuchte es keine weitere Kreativität in der Pflanzenzucht - zumindest, wenn man meinen Ansprüchen genügen wollte. Wenn demnächst DIE Pflanze auf den Markt gebracht wird, die in der Lage ist, den Hunger dieser Welt zu beenden, dann ändere ich meine Meinung. Kulinarisch ist gerade die *One-Pot-Pasta* in aller Munde. Ich weiß gar nicht, ob Debb diesen neuesten Trend überhaupt im Kopf hatte. Mich sprach die Verwendung von Auberginen an, von denen ich aus dem Treibhaus nach wie vor ernten kann. Naja, und wenn ein Gericht Käsefäden zieht, dann klingeln meine Appetitlichkeitssensoren sowieso. Heraus kam eine absolut köstliche, schlonzige Pasta, die ich genauso wieder zubereite. Zutaten 2P: 1 mittlere Aubergine (m: 450g) 3 EL Öl 1 Karotte, fein gewürfelt 1 Selleriestange (ca. 2 EL, fein geschnitten) 1 Schalotte, fein geschnitten 2 Knoblauchzehen, fein geschnitten 140g Orzo-Nudeln (Pasta in Reisform) 2 Tomaten, gehäutet, in Stücke geschnitten 200ml Ofentomaten 150ml Gemüsebrühe 1 Schuß Weißwein 2 TL frischer Oregano Salz, Pfeffer 1 Pr Zucker Harissa 1 Mozzarella, gewürfelt Zubereitung: Die Aubergine würfeln (Debb: 2cm/ m: 1cm) mit Salz bestreuen und 30min ruhen lassen, dann unter kaltem Wasser abspülen und trocken tupfen (m: mit meinen erntefrischen Auberginen überspringe ich diesen Punkt immer). Den Ofen auf 180° (O/U-Hitze) vorheizen. In einer Pfanne 1 EL Öl erhitzen und die Hälfte der Auberginenwürfel mit Geduld (ca.8min) farbig rösten. Mit der anderen Hälfte genauso verfahren und zur Seite in eine Schüssel geben. Den letzten Löffel Öl erhitzen, feingeschnittene Karotte mit kleingewürfeltem Sellerie 3min rösten, dann Schalotte und Knoblauch weitere 5min mitbraten. Den Orzo zufügen, ebenso den Oregano kurz mitwenden und mit einem Schuß Weißwein ablöschen und einreduzieren lassen. Ofentomaten, Tomaten, Aubergine, Mozzarella, ordentlich Salz (ca. 1/2 TL), Gemüsebrühe zufügen mit Harissa, der Prise Zucker und Pfeffer würzen. Gut vermischen und in eine ofenfeste Form geben (m: in meiner Pfanne gelassen). Mit Folie abdecken und 20min garen (m: 25min), dann abdecken und weitere 20min ohne Folie backen (m:10min). *Anmerkung m: Wenn ihr schon derartige Pasta kauft, dann habe ich noch dieses Pilz-Risoniotto für euch und diese Minestrone Quelle: Debb von Smitten Kitchen
