Il freddo concede a chi è ghiotto di cibi ipercalorici di dedicarsi al proprio sport invernale preferito: l’affondo nell’intingolo. Poi basta un’energica passeggiata al gelo per smaltire ogni eccesso. Il Kaiserschmarren – la frittata dolce dell’Imperatore – è uno dei classici piatti bavaresi che scandiscono le mie vacanze dolomitiche. Dal Sudtirolo verso nord, il Kaiserschmarren è disponibile a qualsiasi ora del giorno per rinfrancare sciatori intirizziti e collezionisti di Schnaps (che ogni tanto hanno bisogno di mangiare qualcosa di solido tra un bicchierino e l’altro). Non è una ricetta difficile. A casa mia piace così tanto che ho deciso di non relegarlo più alle vacanze ma il Kaiserschmarrn è talmente sostanzioso che soltanto un appetito vorace può scambiarlo per un dessert, così ogni tanto lo preparo come piatto unico dopo un’insalata rinforzata o per il brunch nei giorni in cui nessuno si toglie il pigiama fino alle quattro del pomeriggio.
