Sweet & Spicy Sweet Potato White Bean Dip 2 cups diced sweet potato 1 head of garlic Olive oil & salt 1 15oz can cannellini beans, mostly drained but not rinsed Juice from 1 lemon 1/4 cup olive oil (more as needed for blending) 2 tbsp maple syrup 1 1/2 tsp salt 1 tsp smoked paprika 1 tsp cumin 1/2 tsp cinnamon 1/4-1/2 tsp cayenne 1/4 tsp black pepper For garnish (optional): more olive oil, fried sage, pomegranate seeds Preheat oven to 400˚F. Slice the top off of the garlic, exposing the cloves. Drizzle the diced sweet potato and garlic with olive oil and season with a little salt. Roast for 30-35 minutes, until potatoes are fork tender. Add all ingredients to a blender or food processor and blend until completely smooth. If your blender comes with a tamper, use it!
