30min · 6 servings Ingredients • 2 lb pumpkin or butternut squash • 1 onion, sliced • 2 garlic cloves • 3 cups chicken broth or vegetable stock • 1 cup water • 1/2 cup heavy cream • Salt and pepper Directions • Place the pumpkin, onion, garlic, broth and water in a pot and bring to a boil, until pumpkin is tender • Remove from heat and use an immersion blender or blender to blend until smooth • Season to taste with salt and pepper, stir through cream and serve. Tip • Before adding cream remove from heat.
