A critical step in creating the best-tasting chocolate starts at the farm where cocoa beans are fermented. The cacao pods are all cracked open and the seeds (beans) are removed. A typical fermentation process involves piling the cacao beans in a large heap on a layer of banana leaves. More banana leaves are used to top the pile and kick off the fermentation process. The beans are stirred occasionally as they ferment which takes about a week.
