4 oz Pineapple Juice 1 in knob of Ginger 2 oz Spiced Rum Small bunch of Mint Leaves juice of 1/2 lime 2 oz Club Soda In small sauce pan combine Pineapple Juice and Ginger. Bring to boil, then reduce to simmer until it has reduced by half, set aside to cool and remove ginger Put 5-7 leaves of mint in a glass with lime juice and muddle. Add Spiced Rum and Pineapple juice. Fill with Ice, top with Club Soda, and Enjoy!
