Pozostawiamy w pojemniku na 15 min i wyrabiamy wg metody jak na filmie. Ja przetrzymywałem ciasto w lodówce ale można w temp. pokojowej. Ilość składań można ograniczyć do 2-3 w zależności od harmonogramu pieczenia - u mnie rozpocząłem ok 17 i zakończyłem ok. 22. Pozostawiamy na 30 min i ponownie wyrabiamy - powtarzamy. Pozostawiamy na 1 godzinę i ponownie wyrabiamy - powtarzamy. Pozostawiamy n 2 godziny i ponownie wyrabiamy - powtarzamy. Pozostawiamy na noc w pojemniku umieszczonym w lodówce. Następnego dnia (po ok. 12-15 godzinach) ciasto dzielimy na 2 części i formujemy bochenki. Przekładamy do koszyczków złączeniem do dołu na ok. 2-4 godziny do pełnego wyrośnięcia. Piekarnik z garnkami żeliwnymi nagrzewamy do ok, 245stC ok. 20-40 min. Bochenków nie nacinamy tylko wkładamy do gorących garnków. Pieczemy ok. 30 min pod przykryciem a następnie ok. 20 min bez do dobrego wypieczenia.
