Składniki: 350g świeżych pieczarek 1 mała cebulka 2 małe ziemniaki 1/2 marchewki mały kawałek selera 1 łyżka masła 50 ml śmietany kremówki 30% 600 ml wywaru warzywnego lub miesnego 50g sera pleśniowego brie natka pietruszki Grzanki: 1 bagietka 1 łyżka masła 2 łyżki posiekanej natki pietruszki 1 kulka mozzarelli Przygotowanie: Cebulę pokroić w drobną kostkę. Marchewkę, seler zetrzeć na tarce o grubych oczkach. Ziemniaki pokroić w kostkę. Pieczarki oczyścić i pokroić w plasterki. W sera pleśniowego zdjąć pierwszą warstwę z pleśnią i pokroić w mniejsze kawałki. W garnku roztopić masło i dodać posiekaną cebulę. Smażyć aż się zeszkli, następnie dodać starte na tarce warzywa i pieczarki. Podsmażyć 2-3 minuty. Wlać wywar i dodać pokrojone w kostkę ziemniaki. Na średnim ogniu gotować około 15-20 min aż ziemniaki będą miękkie. Zupę zdjąć z ognia, dodać ser pleśniowy, sól, pieprz i zmiksować blenderem na gładki krem. Dodać śmietankę i ewentualnie doprawić do smaku. Zupę podawać posypaną natką pietruszki. Piekarnik nagrzać do 200 stopni. Blaszkę wyłożyć papierem do pieczenia. Baietkę pokroić skośnie w cienkie kromki. Miękkie masło wymieszać z posiekaną natką pietruszki. Posmarować każdą grzankę a na wierzchu ułożyć kawałki mozzarelli.
