Keshk is a classic Egyptian base for two recipes, Keshk and Keshk Soup. It is basically a mixture of milk, chicken stock, yogurt and rice flour. It is so delicious and fulfilling in a way I can't even describe and it's usually served with golden crispy fried onions. If you are new to Egyptian cuisine and would like to experiment with a new authentic recipe then this is definitely the recipe for you ;-) SO, here we go! Ingredients ½ cup rice flour 1 cup yogurt 2 cups whole fat milk 1 liter chicken stock 1 onion, finely chopped 3 onion, finely sliced 3 garlic cloves, chopped ¼ tsp nutmeg Salt & pepper Butter Oil Directions In a bowl mix together the milk, yogurt and rice flour. Whisk very well until the mixture gets very smooth. Set aside. In a frying pan, fry the sliced onions until golden brown. Remove the onions to strain from oil and keep ¼ cup of the frying oil aside. In some butter & oil sauté your onions seasoning with nutmeg & black pepper. When onions get tender and soft add the garlic in and sauté for a couple of minutes. Pour over the yogurt mixture and keep whisking constantly adding the chicken stock while you whisk. Leave the mixture to cook on medium heat until it starts boiling and gets a lot thicker. Pour over the frying oil you kept aside and mix well. Remove from heat and serve with the fried onions on top. Try this recipe and...Make Every Day Delicious! :) شوربة الكشك المقادير 1/2 كوب دقيق رز 1 كوب زبادي 2 كوب حليب كامل الدسم 1 لتر مرق دجاج 1 بصلة مفرومة 3 بصلات مقطعين شرائح 3 فصوص ثوم مفروم رشة جوزة الطيب ملح وفلفل زبده زيت ذرة الطريقة في زيت وفير تقلى شرائح البصل حتى تحصل على لون بني ذهبي. تصفى شرائح البصل تماماً من الزيت مع الإحتفاظ بربع كوب من زيت القلي. في بولة يتم خلط الحليب والزبادي ودقيق الرز. نستمر في الخلط حتى يمتزج الخليط تماماً. في وعاء الطهي تضاف كمية صغيرة من الزيت زالزبده. يتم تشويح البصل المفروم إلى أن يذبل تماماً ويصبح شفاف. يضاف الثوم والتوابل. يصب خليط الزبادي والحليب ودقيق الرز ويتم التقليب بإستمرار على نار متوسطة إلى أن يصل الخليط لبداية الغليان، نخفض النار تماماً ويضاف زيت القلي الذي إحتفظنا به. يتم التقليب دقيقة على نار هادئة، ترفع الشوربة من على النار وتقدم ساخنة مع البصل المقلي على الوجه.
