Grilled Kofta Kebab Recipe | Grilled Kofta Kebab Recipe | By The Mediterranean Dish | Soaked bamboo skewers means one thing at my house. It's kebab time baby and today we are doing Kofta. Come with me. Two things you have to do ahead of time when it comes to preparing Kofta kebabs. First of all, if you're using bamboo skewers as I am today, make sure that you soak them in a bit of water for about half hour. The next thing that I did ahead of time is soak one piece of toasted bread until it is, yes, falling apart. You squeeze all the water out. Once you have that ready, we're going to go ahead and put together our kufta mixture. I'm going to start by mixing together some onions some parsley and some garlic. We're going to go in with a big bunch of parsley. Couple garlic cloves, no big deal. And once you just smash them and kind of like throw them in, we're going to start by chopping the onions, garlic, and parsley. Also a few times. Just really want to chop them up nicely. Next, we're going to go in with our meat. Kinda helps to break it apart a little bit before you add it into your food processor. Remember the bread that you soaked in water. This is your secret to juicy kofta kebab. So, we're going to add that in here. A good pinch of kosher salt, black pepper, and then a bunch of beautiful, warm, flavorful Middle Eastern spices. We're going to start with the ground allspice, little cardamom, a little bit of nutmeg, cayenne pepper, just a pinch. I like to add sumac, not very traditional in kofta recipes necessarily but it adds some ting and some depth and a little bit of paprika. For good measure, a tiny drizzle of extra virgin olive oil. I don't always do it but it does help. So, just a tiny drizzle and then, we're going to close this Don't want to overmix your kufta. This right here looks pretty good. It's like really well combined. All the parsley, all the beautiful flavors. So, we're going to skewer us some Kofta and this is when I call my husband because Kofta night is a couple's night at my house. So, we're going to do this together. Hey, babe. Can you help me? I'm here. It's Kofta night. Alright. So, you want to grab about almost a baseball size. You just round it like that. Make it into an oval and then you just kind of form it along the of the skewer. Oh, that's a perfect so good. Look at this perfection. So, you take this to the grill and I'm going to fix the fixing. Alright. Yes. I did it. I can't wait to dig in you guys. I went ahead and fix our favorite salve and of course, my lime tahiti sauce which is the best with all things kebabs.
