Gingerbread cookie infused custard filled spiced craquelin choux buns, a great dessert to serve for Christmas.The choux buns have a gingerbread spice craquelin top which adds a lovely crunch. The custard can be replaced with Chantilly cream and added spices and served like profiteroles with chocolate sauce.Alternatively you can add some biscoff spread to a vanilla pastry cream.
