Combine 2 teaspoons lemon zest with a pinch of salt in a bowl. Rub the two together until fragrant. Add the cheeses, black pepper, lemon juice and toss to combine. 2. Heat a drizzle of oil and a knob of butter in a pan on medium heat. Cook each slice for 2 minutes on one side. 3.
