Heat the oven at 400°F or 205°C. 3. Combine the cheese, spinach and pinch of salt in a bowl. Whisk the egg in a bowl. 4. Cut the phyllo pastry sheets into two sheets, lengthwise. Lay a pastry sheet on your work surface, drizzle a bit of oil or butter on top, then place another sheet on top. 5. Brush the egg wash on both ends of the phyllo sheet.
