Il bollito misto è una preparazione tipicamente invernale nella quale la carne, viene lessata con cipolle, carote, sedano, erbe aromatiche e spezie. Anticamente noto anche come “bollito sette tagli”, si dice fosse uno dei piatti preferiti di Camillo Benso Conte di Cavour e del re Vittorio Emanuele II La carne, fatta cuocere molto lentamente, in modo da essere lessata, i grassi delle carni e le verdure conferiscono al bollito un sapore unico. Le carni posso essere accompagnate da salse a piacere come mostarde di frutta, nel caso del nord italia o salsa verde. I tagli di carne utilizzati sono importanti, quali: Biancostato, punta di petto, fiocco di punta, cappello da prete, noce , tenerone e culatta. Queste le carni usate nella ricetta originale. Tuttavia la ricetta presentata in questa sede utilizza anche la gallina che conferisce al bollito un sapore piu’ importante.
