מנה קלילה, צבעונית וטעימה. טעים ומשביע כשלעצמו, בשילוב עם פסטה / אורז לבן/ נודלס מהווה ארוחה מלאה ומהירה. לחזה העוף 1/2 ק"ג חזה עוף ללא שומן או עצם 1 לימון פרוס 2 עלי דפנה 6 כדורי פלפל אנגלי לירקות מוקפצים 1 כף שמן קנולה 1 בצל סגול חצוי ופרוס 2 שיני שום פרוסות 3 -2 כוסות פרחי ברוקולי קפוא 10-15 עגבניות שרי חצויות מלח ופלפל שחור גרוס 1 כף טימין טרי 1 כפית גדושה אורגנו יבש מיץ לימון טרי מ- 1/2 לימון בסיר רחב מביאים לרתיחה 3-4 כוסות מים, לימון, עלי דפנה ופלפל אנגלי. מבשלים ברתיחה עדינה 2 דקות. מוסיפים את העוף ומבשלים עוד 10 דקות (המים צריכים לכסות את הנתחים), עד שהעוף לבן לגמרי. מורידים מהאש ומשאירים את העוף במי הבישול כ- 8 דקות נוספות. מוציאים מהמים ומצננים. פורסים לרצועות או לקוביות- מה שמעדיפים. חולטים את הברוקולי במים רותחים כשתי דקות ומוציאים. במחבת מטגנים היטב את הבצל עד לשקיפות, מוסיפים את השום והפלפל השחור ומבשלים כשתי דקות נוספות. מוסיפים את העגבניות ומבשלים עד שהן מתרככות מעט. מוסיפים ברוקולי, מיץ לימון, מלח, אורגנו וטימין ומבשלים יחד כשתי דקות, מדי פעם מקפיצים. מוסיפים את העוף ומקפיצים במחבת כדקה. Chicken 2 boneless skinless chicken breasts (500 g) 1 lemon sliced 2 bay leaves 6 black peppercorns Tossed Vegetables 1 tablespoon vegetable oil 1 red onion, halved and sliced 2 cloves of garlic, sliced 2-3 cups frozen broccoli 10-15 cherry tomatoes, halved Salt and ground black pepper 1 tablespoon fresh thyme 1 heaping teaspoon dried oregano Juice of 1/2 lemon. Bring 3-4 cups of water, lemon juice, bay leaves and allspice to a boil. Simmer for another 2 minutes and add the chicken (make sure the chicken is submerged). Cook for another 10 minutes, until the chicken turns white. Turn off heat and leave the chicken in the water for another 8 minutes. Remove the chicken and transfer to a plate to cool a bit. Cut the chicken breasts into strips or cubes - whatever you prefer. Place the broccoli in a bowl and blanch in boiling water for 2-3 minutes until the broccoli is thawed. Drain. Saute the onions in a pan until they become transparent. Add garlic, black pepper and stir fry. Add tomatoes and cook until softened. Add broccoli, salt, lemon juice, oregano, thyme and cook for another two minutes, toss occasionally. Add the chicken and toss gently for about a minute.
