Un pot de mascarpone à utiliser rapidement et l'envie d'un gâteau gourmand mais pas trop riche, voilà comment est né ce quatre-quarts dans lequel le beurre est intégralement remplacé par le mascarpone. Je trouve qu'on gagne au change car outre le fait d'obtenir un dessert un peu moins gras, sa texture est aussi plus moelleuse et plus fine. Comme son nom l'indique, le quatre-quarts est composé de quatre ingrédients principaux en quantité égale ; préparé ici sur la base de trois œufs (soit environ 150 grammes), on obtient un cake de taille moyenne. Avec quatre œufs, le cake pourra satisfaire la gourmandise de nombreux convives. Il faudra juste prolonger un peu le temps de cuisson. Celle-ci est de toute façon à vérifier en plantant au centre une lame de couteau, qui doit ressortir sèche. Ingrédients (pour un moule à cake de 25 cm) 150 g de farine 150 g de sucre 1 c. à c. de levure chimique 150 g de mascarpone 3 œufs 1 c. à c. d'extrait de vanille 10 g de beurre pour le moule Préparation Préchauffer le four à 165°. Sans Thermomix Dans un saladier, réunir tous les ingrédients. Mélanger les ingrédients à l'aide d'une cuillère. Au Thermomix Dans le bol du Thermomix, réunir tous les ingrédients. Mélanger 10 secondes, vitesse 4. Racler les parois du bol et mélanger à nouveau 5 secondes, vitesse 4. Beurrer le moule et y verser la pâte. Enfourner le moule pour 45 à 50 minutes. Tester la cuisson en enfonçant une lame de couteau au centre du cake : elle doit ressortir sèche. Démouler le cake sur une grille et le laisser refroidir.
