Una chantilly soffice e soda al tempo stesso, adatta a decorazioni fatte con sac à poche o a creare una torta moderna. La ricetta l'ho estrapolata dai Chocolate Pudding di Peccati Mignon di Montersino, delle monoporzioni che contenevano una parte centrale di chantilly al caramello. Io ho apportato 2 variazioni: ho usato gelatina al posto dell'agar agar e ho aumentato la dose della crema pasticcera per ottenere una consistenza più cremosa e meno soffice ma ovviamente proverò la versione originale quanto prima. Chantilly al caramello Ingredienti: 125 gr di panna fresca 50 gr di crema pasticcera (io 100 gr) 2,5 gr di agar agar (io 2 gr di gelatina in fogli ma ne consiglio 1,7 gr) 20 gr di salsa al caramello Per la salsa al caramello: 100 gr di zucchero semolato 33 gr di acqua Procedimento Per la salsa al caramello: In un tegame a fondo spesso, o ancor meglio un polsonetto, caramellare lo zucchero a secco e decuocere con l'acqua bollente, mescolare per far sciogliere bene stando attenti a non scottarsi. Questa salsa non indurirà una volta fredda, si manterrà morbida. Per la chantilly al caramello: Versare la panna nella bacinella della planetaria lasciandola lucida, non troppo ferma. Scaldare una parte di crema pasticcera insieme alla salsa al caramello e una volta caldo versare dentro l'agar agar arrivando a bollore. Unire il resto della crema fredda e mescolare. Versare il tutto dentro la panna mescolando delicatamente dal basso verso l'alto con una spatola. Versare il tutto in una sac à poche con bocchettina liscia. (Io avendo usato gelatina l'ho prima idratata in acqua fredda e poi sciolta nella crema pasticcera in parte scaldata). Ecco che fine ha fatto! :p
